Default Cream of Broccoli/cauliflower soup

I made this yesterday, and it was SO yummy, I had to share! Bear with me...I just threw stuff in a pot, so I'm guessing at numbers. Adjust to your own taste!!

16 oz chicken broth (LF, Low sodium)
1 bay leaf
1/2 bunch broccoli, chopped
1/2 head cauliflower, chopped
Place in Pot, cover, bring to boil until veggies very soft. Meanwhile....

1 T. olive oil
1 small onion, chopped
2 stalks celery, chopped

Saute onion and celery in oil til onions clear. Add to broth mixture when done.

Find bay lear and discard. Take ingredients, run through blender (I love my new immersion blender!!) til smooth.

I added milk (prob 1-2 cups) and a small amount of broth (prob 1/2 cup) until reach desired consistency. Heat until eating temperature.

Sprinkle LF cheddar cheese on top, if desired.

I just made this with just broccoli and onions. I also added garlic salt and a good amount of pepper. It's actually pretty good.

Sounds yummy! When I was growing up, my mom left the bayleaf in whatever she cooked. Whoever got the bayleaf had to clear the table.
