Hey, how was your Weekend Awaaaay, JG? Did the weather hold up there? We had spitting snow/cold for my exciting 5k . . . think those conditionsmade me that much stronger tho', ya know? Hope you had it better!

DEFINITELY LOVE having this one on hand! I did make a few substitutions & it still turned out great . . . mine was 1/2 turnip greens & 1/2 spinach . . . I also subbed a few black olives for some ingredient I didn't have on hand & baconpieces instead of ham.

Oh yeah . . . it wouldn't fit in my pie plate . . . so I baked it ina BUNDT PAN! Cute lil spinachy-turnippy ring that cut up ez'ily.

Hey, ladies!! Auddie, thanks so much for your comments in my other thread and if you still need to figure out how to listen to the podcast, drop me a PM and I'll see if I can help I also love the idea of the spinach/turnip greens quiche in a bundt shape I agree that Linda's Low Carb is AMAZERING!

I had my own Linda's Low Carb experimentation this weekend. Pumpkin Bake (ALWAYS a favorite of mine) and I turned the "Improved Revolution Rolls" into mini blueberry muffins. The entire recipe as I made it (I didn't use cream of tartar and I subbed out liquid stevia for splenda and made it sweeter) came out to having 605 calories / 46g fat / 16g net carb / 29g protein. Not bad for a whole recipe! The consistency was really nice--it was like a blueberry angel food cake almost.

did find that the combination of not prepping enough on plan protein/veggies ahead of time combined with the pumpkin bake and the "muffins" equaled out to huge portion control issues yesterday. My calories were WAY high but I'm still in ketosis today after getting 35g net carbs instead of 25. I'm moving into OWL, and I'm trying to move up to 25g net carbs/day to see how it goes. I don't think I'm going to go any higher than 30-35 until I've reached goal, but I want to start broadening my menus a bit. I like the idea of having something like a pumpkin bake of blueberry "muffins" on hand for an after-dinner treat.

I have three papers due on Wednesday ( 8, 4, and 3 pages respectively), so I need to get started on them. I did want to say hello, though and let you ladies know that I'm thinking about you


EDIT: Kim (did you know that I'm also a Kim?)! I just saw what you posted over on my M.I.A. thread, and I wanted to thank you for posting there. I'm flattered that you think I'm inspirational, because you're a HUGE inspiration to myself and to many others on the LC forums. Going "by the book" isn't always completely a breeze, but I think that it's definitely a huge advantage over winging it. What I never did in my attempts of the past on LC diets (South Beach, Atkins, Suzanne Somers [not -technically- lc, but I was certainly doing it that way]) is that I never went through the "phases". I always stuck with Phase I/Induction/Whatever, feeling that I'd just be done with a "diet" once I lost the weight...but that's not what it's all about.

I'm actually going to go into OWL now, add more foods into my Atkins plan and see where my CCLL is. Then I'll move on to Pre-Maintenance and finally Maintenance, because Atkins is how I'm going to live my life! There's no reason why I can't enjoy every kind of meal experience on Atkins either! Pizza craving: cauliflower pizza! Dessert craving: pumpkin bake, some blueberry revolution rolls or a few strawberries. Mashed potato craving: mashed cauliflower. Rice: grated cauliflower. Chinese food can be simulated with a little bit of soy sauce, canola oil, mixed veggies and chicken. There's nothing that I used to "crave" that I can't have on LC and be even MORE satisfied than I was. I'm not depriving myself of anything! I'm also discovering the wonders of cauliflower--it's the most versatile vegetable I've ever had. To think, I used to hate it!

Hey Ladies!!

DBF & I had a beautiful weekend Auddie! We had a picnic on Saturday...went to the grocery store & both of us picked out a bunch of low carb food Let me tell you...I was so proud of my sweetie when he walked passed the snack aisle & the bread aisle and headed straight to the produce aisle! We got some chicken ceasar salad, some cut up fruit (melon, blueberries, pineapple, mango), cheese, sliced turkey breast, low carb yogurt, almonds....it was a delicious feast!

I am SO proud of him...he's lost about 35 lbs. He's gone from wearing a XXL shirt to now wearing a L

Kim, thank you for your kind words. I enjoy coming to this board & sharing my experience on Atkins with others If I'm inspiritional & encouraging to someone else...that makes me happy!

Default Its Monday and I am almost at two weeks of induction

Hello Angels --

Yup, its day 12 today, and I am feeling GREAT! I can't believe I have got 10 pounds off, and that my cravings for sweets have diminished a whole lot. I was at PIlates this morning, and I could feel I was worker harder, because I am animated with the idea of becoming the size that I used to be!!!!

The GObsmacking Bloke and I had a rather long (probably too long) series of email messages yesterday, and as I have read and re-read them, I feel that I was a whole lot flirtier than he was, and I wonder if its all in my imgination, except that now he will think that I am hugely coming on to him Ah yes, I remember now why this is such a treacherous business. I can't even remember what he looks like! But I am putting my best foot forward, and just getting on with my work and well... having a pedicure, etc.

I have made a vow to only stay 2 hours at the Friday afternoon event -- and to take it easy and pretend like in that Oreal commercial, that I'm Worth It.

What are your essays on Azure? I'd love to know. You have a lot to do in just a couple of days, don't you?

Jersey Girl, you are such a brilliant example to follow -- look at you with all your fruit and healthy things, and a husband tagging along.

This semester, it seems like I have nothing but a lot to do I'm taking 6 courses this semester; 5 are upper-level English courses, 1 is Italian. So, needless to say I have a perpetual line of papers to write and books to read.

The 8-page paper is for my British Literature II course. We're currently discussing the Victorian Age, and the assignment involves choosing one of 3 essay topics to write on. I'm going to talk about the Victorians' views of women in terms of some of the poetry we've read: Where a woman is either "the angel in the house" or the "harlot"--the virginal wife or the street walker. It's a very black and white sort of perspective, so that's what that one's on.

The 4-page paper is about Shakespeare's The Tempest, and choosing a piece either based on it or about it (we have selections ranging from "Caliban Upon Setibos" by Browning to the film Forbidden Planet)), then discussing how the intertextuality works between the two pieces...

The 3-page paper is actually more like a progress report on a larger paper we're working on for my Irish Literature course. Our longer paper is a 15-20 page research paper on the topic of our choice as it relates to Irish Literature. I'm writing about Seamus Heaney and his collection "North", and the connections to the Bog People by Glob. The paper due Wednesday is to summarize the research we've done so far and how we're going to approach the larger paper

I've missed you guys! I got my new modem yesterday and things seem to be working a lot better now. I sure got more done at home while my internet was out its amazing what I can accomplish when not glued to the computer. My eating has been good, exercise; not so much. I'm realy liking GCBC. Exellent book!

Congrats on your loss RubyJan! From reading your posts I would say this guy really likes you! Maybe he's just not the flirty type, he is a guy. I would say two dates in one day, an invite to see his place, and a series of emails are a good sign he's into you!

JG, Wow your DH is doing so good! Wish I could lose that fast.

Way to go finishing the 5K Aud! & even in the crap weather. Love your goal for the week!

Good luck with your papers Az! You are accomplishing so much! You have such a full schedule and still manage to stay on track and post here, and take on extra things like your podcast (loved it). You rock!

ok . . . who has had these delicioso (no I didn't take Italian - that's from Dora!) . . . "Lavash Bread" thingies & didn't tell me about them?????

dh just brought them home from Wal Mart (he's being nice since we had yet another fight last nite--this lay off certainly has helped highlight all of our differences!) . . . so Mr. Suddenly LC Supportive--after baking a German Chocolate Cake last nite-which I've resisted-bought these: "Joseph's - Flax, Oat Bran & Whole Wheat Flour Lavash Bread" thingies home . . . 14 total carbs if you ate the whole gigantic sheet/piece . . . I made a ham & turkey with letucce & mayo out of about a 1/4 piece - very filling & the pkg clearly states "Great Taste*May Help Protect Your Heart While Losing Weight* - so that's GOTTA BE TRUE, right?

All I know is I did another 5k & came back RAVENOUS - this was very filling & tasty!

Auddie, Joseph's is a local company to me, I didn't know they were in WalMarts, too! They're in chains in the Northeast! They also have a low carb pita (made out of the oat/flax/whole wheat)--each pita is 8g total carbs, 4g fiber--for a total of 4 NET CARBS! They're really great. 1/2 of one makes a perfectly good sandwich, a whole one makes a good pizza crust Once I'm at a higher net carb count overall, but still solidly in ketosis, I'll be adding them back in.

And Auddie, The lavash bread (if it's the low carb one) for a WHOLE piece is 14g total carbs but 8g NET carbs, so half is only 4g net carbs I prefer their pitas to the lavash, but I've tried both in my search for a LC bread source in the past.

Aud is your DH home most of the time too? I would go crazy: I love my DH a lot but to much together time can be bad. I like my alone time. It's nice to miss him once in a while . My DH is going to be off all next week and his parents are coming to stay with us.

I'm going to have to try some of the recipes soon, my menus are pretty boring. I think mostly I'm just to lazy to try new things, but cauliflower pizza is realy tempting me, I went shopping today and tried to find pizza pepperoni, but they all had wheat in them, then I looked for pizza sauce and it was all high in carbs so I gave up on that idea.

Have a good night , I better get to bed, I always stay up to late and have to drag myself out of bed in the AM.

Yes, well I am now on day 13, and weighed in at 179.8 this morning, which I had to record as 180, just to be safe... and you are right. He isn't doing too well on the hard to get test. Our last email exchange was late on Sunday pm, and haven't heard a thing again. hmmmmmm. I am feeling pretty confidant that he won't stand me up on the friday plan, but I am not going to contact him again until something happens, so I might be back moaning about it Friday night!!! But I ain't gonna screw up my meal plans for it. If he isn't interested since finding out more about me, well, I'll jsut write an even better, longer, smarter BOOK on Friday afternoon! Yes, punce ~ dh is always here (disabled) . . . together time isn't what it's cracked up to be in our case, obviously. DOES remind me of years ago when my Dad retired & him & Mom had a period of ummm, let'sjust call it "adjustment."

It'll get better or it won't . . . maybe I'll be back towork soon? But tx for asking & letting me vent.

Dear Angels:

yes, well I have come to the end of my exciting induction weeks, and I know that now I have to ...just keep going. I think I will work in 'sections' of Induction. You know, induction 1, done; now I am starting induction 2.

Azure: You are really writing up a blaze there for school. I think it all sounds grand. And are you graduating this year? I must say that I think you are an excellent writer -- given your posts and also your podcast. I hope you are thinking of continuing, and doing an MA, or if not, to really get going on a blog so that you can hone your skills and let the world read your talented writing. You really do get your energy and pizazz across.

I think things will be okay for the Friday afternoon event. I mean, he emailed me today asking if I would get (for him to give to his mother for her birthday) some DECORATIVE PLAYING CARDS.. Jeez....I am gonna do it, but I think the guy may think that women are like mothers -- they do his shopping for him! Very unsexy request.

Ruby, I am indeed graduating this year (May 25th!). I just picked up my graduation gown, hood and cord today; I'm graduating Summa Cum Laude with a GPA of 3.9 (I'm VERY proud of that particular bit) I am most definitely going to be getting my MA. I got accepted into two MA Programs at the University of Vermont and the University of New Hampshire, but the cost was just too high as I wasn't offered a TAship--$45k for the first year was a bit much to swallow.

Plan B involves finding a job down in Connecticut, getting an apartment with my boyfriend of 2.5 years, and attending graduate school part-time. Eventually, I'll be getting my MA in English Literature and I may end up teaching at the collegiate level at least part time. I'm glad you think my writing has energy and pizazz; I know I can write a decent critical paper, but it's that whole "find your own voice" thing that I've never been sure I've accomplished.

Right now, I'm settled into the fact that I turned in all my papers (that 8 pager ended up being a 13 pager before I was finished...) and I can finally sleep again. So, I think I'm going to go lay down for a bit!
