Well mine is cheesy, but really quick and most people don't notice anything is different:

Cake Mix
Can of Diet Soda

Mix the two together and bake per the instructions. I usually make cupcakes out of this. You can try different combinations, like diet coke with chocolate cake mix, diet orange soda with white cake, diet lime soda with lemon cake... the combinations are endless. They end up REALLY light and fluffy. I love em. You can top them with ff cool whip if you like.

I have to second that cake mix & diet soda. I prefer Diet Cream Soda with Vanilla Cake. Yum! You could even add a few green pink & purple sprinkles on top of the cool whip to make them all festive!

I've done cake mix and a can of pumpkin, it makes really yummy cupcakes.

For a healthy dessert, it's really hard to beat a nice angelfood with fresh fruit and a little cool whip.

Fruit kabobs can be fun too, with fat free caramel or chocolate dipping sauce, or a tangy yogurt dipping sauce (mix the yogurt with something tropical and zingy like mango or pineapple). With stawberries, bananas, melon, pineapple, they make a beautiful presentation.

This recipe for Espresso Angel Food Cake from Sunset came out fabulous (even my non-dieting SO liked it) and it's hard to find a lower calorie dessert. I didn't have whole-wheat pastry flour and it's not sold at any stores in my area, so I used 1 part regular whole wheat flour to 1 part cake flour. You could serve it with a fruit topping, like maybe berries with a little brown sugar and cinnamon.
