No concrete explanation was ever given that I have yet to come across and I am constantly sleuthing to understand the dynamics of this food plan all the time. I guess, it goes back to beans being a starchier vegetable and the fact, as someone else mentioned, that it can cause some people to become constipated or bloated, which
can affect your weight lose efforts.
In the past, before I started SBD, I read to start beans slowly so your body can become accustomed to them but after that it is really up to you. I think they are truly "a miracle fruit" as the rhyme goes.
