Tortellini en Brodo
9 oz Buitoni Whole Wheat 3 Cheese Tortellini (fresh)
2 & 3/4 C. vegetable broth
1/4 t. black pepper
1/2 t. crushed red pepper
5 oz bagged fresh baby spinach
1 cup chopped tomato
Parmesan cheese (optional)
Bring broth, black pepper, and red pepper to a boil. Cook pasta according to directions. Remove from heat; stir in spinach until wilted. Stir in chopped tomato. Divide into 4 bowls. Top with parmesan cheese, if preferred.
Makes four 1 cup servings. 5 points per serving, if you do a SBD/WW combo.
