I love lentils. My favorite is an indian preparation. Finely chop an onion and saute it in cooking spray until lightly browned. Add your lentils, water/stock and bring to a boil. Throw in a few slices of ginger (which have to be removed at the end), some tumeric, cumin and salt, and simmer away until the lentils are done (you may need to add more water). Remove the ginger and adjust seasoning as desired. The best thing is the final flourish, which you could skip if you are averse to final flourishes, but I find it the best part. Heat a small amount of olive oil (or ghee, if you have it) in a small saute pan, then throw in chopped garlic and cumin seeds. Allow the garlic to brown and then pour the oil, the garlic and the cumin seeds into the lentils and stir. Voila, delicious! I always garnish with fresh, chopped cilantro. Yum!
