You don't need a mix to make Fiber One muffins. If you make them yourself, they will be lower in calories (half the calories as the mix) and have no processed ingredients other than the Fiber One cereal itself (as opposed to the somewhat scary list of ingredients on the mix, which includes partially hydrogenated oil--usually a source of trans fats even though the label says there are no trans fats in it).
Here is my recipe for them:
Fiber One Muffins
• 1 1/2 cups Fiber One cereal
• 1/2 cup boiling water
• 1 cup whole wheat flour
• 1 1/4 teaspoons baking powder
• 1/2 teaspoon salt
• 2/3 cup Splenda or sugar
• 2 tsp pumpkin pie spice (or cinnimon, or ground ginger)
• 1/4 cup Eggbeaters or egg whites
• 1/4 cup pumpkin puree
• 3/4 cup skim milk
• 2-4 oz blueberries, diced cherries, diced peaches/apricots or other fruit (optional)
Soak Fiber One in boiling water until all the water is absorbed.
Blend dry ingredients together in a bowl (flour, bakiing powder, salt, Splenda, spice).
Mix together wet ingredients (Eggbeaters, pumpkin puree, milk) and stir into dry mixture along with Fiber One (and fruit, if using) just until lightly mixed. Do not overstir!
Divide batter into 10 muffin cups in tin sprayed with non-stick cooking spray and bake at 375 until browned, about 20 minutes.
Per muffin (with splenda and optional fruit): 80 calories, 2.5g fat, 18g carbs (5 g fiber), 3 g protein. That's compared to 190 calories per muffin if you the make the mix as directed (and 130 calories per muffin in the mix alone).
If you want apple-cinnamin muffins, use cinnamon instead of the pumpkin pie spice and add 1 diced apple (about 4 oz) as the optional fruit.
