I'm new but I gotta jump in somewhere! :D
I had leftovers from my 2 year old's bday party last night - a bed of lettuce with 1/4 cup shredded cheese, 1/2 cup taco seasoned ground chuck, 2 tbs. black olives and a dab of homemade salsa. Yum! |
I had a cup of leftover homemade chili with a little bit of 2% shredded cheese, light sour cream and chopped onion- yummy and filling!
The recipe is so simple too, I just brown some extra lean ground beef (or turkey), add an 8oz can of tomato sauce (no salt added), a 15 oz can of diced tomato, a packet of chili seasoning (no salt added), and a can of low sodium black beans (or any bean you like). Just salt and pepper to taste, add a little water if you like it soupy-er and let it simmer for a few minutes. You can also dress it up and add just about any veggie. It's so fast and easy and the leftovers are just as good! |
I had a (Boca) spicy soy patty on sesame seed bun (no whole wheat buns in the house :() with a tiny bit of mayo, baby carrots and applesauce! Mmm.. :)

Our CSA is still going strong and we got a cabbage last week that was almost the size of a basketball! Seriously, it was huge, so I decided to make cabbage soup with some parsnips and fresh parsley - also from the CSA:) I think we're going to be eating soup all week now!

Fashinjunkie09- That chili sounds awesome!!! I had a smart ones frozen dinner (baked ziti). I actually really like smart ones so I was pleased :D

Today I have the saddest lunch in the world because I'm planning a big dinner.

I know this thread was started so someone could get ideas for a lunch that has already been and gone, but I feel like posting my lunch from just before because it was so damn delicious and I can't get it out of my mind. Ridiculously simple as well, I'm going to have to start having it more often.
Salad made up of: iceberg, carrot, cucumber, shredded roast chicken breast, cut up chunks of roasted kumara (kumara is kind of like a sweet potato). With balsamic dressing. MMMM. So good. Oh and an apple. |
A few weeks ago I made a giant pot of lentil, carrot, and spinach soup... I put half of it in the freezer, and took some of that for lunch - It was really yummy.
I work close to a Wendy's, so if I don't have anything to take in for lunch, or if I pack lunch then leave it at home :), Wendy's is my go-to restaurant. Sometimes, I'll just grab a small chili with onions and eat it with a pack of crackers. If I'm really hungry, I get the chili and a plain baked potato...if the potato's big, I scoop out part of the middle to make a "shell," and I pour the chili on top - no butter or sour cream - and I always eat the potato skin. Sometimes, I'll get their half size chicken pecan salad with pomegranate vinaigrette and a diet soda, and I tend to use only about 1/2 the candied pecans they provide. new healthy choice soup in the microwaveable container with the cheese tortellini... OK, not the best. And some hot green tea and cheese crackers. Not my finest moment!

I had my Tuna Celery Herb Salad. It's a can of tuna mixed with 1 Tablespoon of Vinager and Olive Oil dressing, I add a little Rosemary and Parsley. Then I chop up two stalks of celery and mix it all together. I REALLY like it a lot, it's a filling meal, and it's under 200 calories.

I'll share my favourite (and healthy) lunch too!
A small wholemeal pita with lettuce mix, sliced avocado, and turkey slices. *Salivates* I think the whole thing would be around 200 - 250 calories? |
missed breakfast this morning so had a brunch of sliced WW bread toasted and covered with lower fat PB and topped with sliced Bananna with an apple on the side. I'll probably have some Vege soup to top me up before work (I work 3pm - 11pm)

Same today as yesterday: home made cream of broccoli soup with ww croutons and some peameal (Canadian) bacon bits plus an apple. Yummy - especially after working outside on a cold morning.

Today I will cook a squash soup with a hard boiled egg!
