Hello ladies. Still so so sore from Wednesday's workout, but I forced myself to go for a run anyways. Between the soreness and the hotness (over 90 here!) I only made it 2.5 miles instead of the 3 I'd planned, but I'm calling it a moral victory.

Fiction - short story, just a little creative writting to keep the brain going (more of a self-goal, than anything really).

How was everyone's weekend? Or is it still your weekend? Almost over here. I have been walking way too much and my ankle is not healing as quick as it should be.
Start work tomorrow. Stressing a bit about that but did get my stats assignment done. Woo!
Got a chapter done, and if I can get two more done today, it'd be awesome.
Be careful with that ankle, Bex, until it's healed completely it will be very easy to reinjure. (is that a word, did I spell it right? Ah heck, I'm too lazy this morning to use spell check, ) Today's Sunday for me, so I got a full day of weekend left before work Monday, yay!
Well, I have to say, I found a nice breakfast cereal that gives a bit more volume than my usual cereal choice for less points value. Kix. When I grabbed my brother a box, I checked the Nutrition Facts and was impressed. Not only that but the ingredients were in plain english, nice. Cal 110, Fat 1, Fiber 3, per 30 grams (or 1 and 1/4 cups) I weigh my food so I usually pour it into a plastic drinking cup and get quite a bit for 3 points.

How is everyone doing? Weekend sure flew by. I watched Dexter season 1. Literally the entire season. BF and I only got out of the apt to get food (and not healthy food at that). But I made Thai Peanut Pork for dinner tonight (yay for crock pot). And I'll have leftovers for dinner another night.
Msgeng- moral victory for sure! I still haven't gotten off my butt and started working out. Good job!

Okay, so here is what I used, but I never follow a recipe exactly:
Ingredients
* 1 (2-pound) boneless pork loin, trimmed of fat and cut into 4 pieces shopping list I used pork loin chops (4ish) so I only eat one chop...easier for me.
* 2 large red bell peppers, cored, seeded, cut into strips yuck...hate em. Skipped, but added onion.
* 1/3 cup prepared teriyaki sauce I made my own teriyaki sauce.
* 1 cup chicken broth skipped this...used water
* 2 tablespoons rice vinegar
* 1 teaspoon dried red pepper flakes
* 2 cloves garlic, minced I used like 10 cloves and left them big. I love garlic.
* 1/2 cup creamy peanut butter I used natural PB, but low fat would be more points friendly
* For serving:
* cooked rice Last time I had it over Quinoa, but tonight we'll be having it over Bulgur. High in fiber!
* 1/2 cup chopped green onions (white part and half of dark-green stalks)
* 1/4 cup chopped dry-roasted peanuts
* 2 limes, cut into 8 to 12 wedges last time I skipped this, but I might try it tonight
How to make it
* Coat inside of slow cooker with nonstick spray. Place pork, bell peppers,broth, teriyaki sauce, rice vinegar, red pepper flakes and garlic in cooker. Cover and cook on low setting until pork is fork tender, 8 to 9 hours.
* Remove pork from cooker and coarsely chop. Add peanut butter to liquid in cooker; stir well to dissolve peanut butter and blend with liquid to make the sauce. Return pork to sauce and toss to coat the meat.
* Serve in shallow bowls over hot rice. Sprinkle with green onions and peanuts. Pass lime wedges, to serve with this wonderful dish. It's kind of high in points, but you can easily make changes to make it more point friendly (over veggie instead of rice, less peanuts, etc). Let me know if you make it how it turns out.

I'm home from my 2 weeks of travel, and am having a very lazy day. I went for a run this morning (only one more and I'll be done with C25K!) but have mostly just been lounging since then. But, I figure I should enjoy it while I can. On Thursday I'm going to New York to see some friends from college, then I get back Sunday, and class starts Monday morning. Ugh!

And its not a terribly physical job but yesterday was set up day so lots of running round getting stock etc. Was very sore and swollen when I got home. But a lot better today. MsGeng - Well done for going for a run. Enjoy some relaxing time while you can! I never thought I would say this but I am actually jealous of you going for runs. I miss exercising. Damn alkle. What are you studying?
