a potato with 5 oz ground chicken (taco style) on top. Had a dollop of ff sour cream and 1/2 oz. grated cheese. Side of steamed asparagus and portabella mushroom.

Last night was my son's bday- so per his request we had egg souffle- eggs, cheese and turkey bacon. And we also had wheat biscuits, along with fruit salad. Desert was lemon cupcakes.
Tonight's plan is Pork chops, with wild rice and glazed carrots.

Turkey breast from the crock pot. I removed the skin added salt and pepper and water only to cook in. Made Lemon Rice as a side (didn't really like the rice).

I satisfied my pizza craving... with healthy, homemade, thin crust pizza!

I used: Light Italian flav. Flat-Out wrap for crust, light garlic marinara sauce, FF mozzarella cheese, 75% red. fat turkey pepperoni, TONS of veggies (fresh hot peppers, baby bella mushrooms, onion, black olives), a sprinkling of crushed red pepper, garlic powder, oregano, and FF parm cheese... and I popped it in the oven at 400 degress for 15 minutes.

Must say.... DEEEEELISH

my bf cooked! smart pasta with ff cheese, mushrooms and spinach. the garlic bread was regular bread and regular butter so it was the most cals but he did so good. I was proud!

I thought I was being good at copelands. I had the wood chuck grilled chicken and yams. Small chicken breast with sauteed onions and sweet potatoes. But the pots tasted like it had tons of sugar in it and it was topped with the fried onion straws. So good though! I suppose I could have made a worse choice though

Last night I made chicken Enchiladas... WEll, Kind of... Instead of using tortillias for mine, I sliced up eggplant longways, roasted it and used it! IT was SO YUMMY!

wow blissclaire... that's a great idea w/ the eggplant... i'll have to try that

last night i had greek spaghetti squash "pasta"... baked the spaghetti squash, then sauteed reduced fat spinach & feta chix sausage, chopped roma tomatos, black olives, chopped spinach, baby bellas, and red onion w/ some garlic and seasonings in olive oil.... i also mixed in some FF feta cheese towards the end. used that as the "sauce" over the spaghetti squash "pasta".... quite yummy... and right now I'm eating the leftovers for lunch
