Last night I made up a rice thing with leftover chicken, ham, peppers, chicken stock and paprika. It was a bit bland really but I was inspired by this thread and then realised I have very little food in the house!

Tonight I'm not sure yet as still haven't been food shopping, tut tut.

- 5 oz baked chicken with a coating of whole wheat bread crumbs and spices served over 1 cup of spaghetti squash. 1/2 cup of tomato sauce over top.
- three massive slices of baked eggplant seasoned with cinnimon

I was stuffed! It was sooo good.

last night I had a few ounces of NY Strip steak, a gift from df's mom and made by df. It was amazing, we don't get steak very often, and my serving was only about 200 calories. Yum.

Chicken sauteed with garlic, olive oil, and some pepper flakes. Tossed into penne pasta with alfredo and pesto sauce. HORRIBLE! And I had 2 toffee bars....

Tomorrow = better.

Tonight I grilled up 4 oz of chicken breast seasoned with tomato-basil-garlic mrs dash, put it into a whole grain roll with a slice of provolone cheese and a spoonful of warm marinara sauce, served with a side of grilled asparagus.

I had the most delishhh dinner last night... Trader Joe's meatless stuffed "chicken" cutlets with a spinach salad. Sooo high in sodium, but so amazingly yummy. And lots of protein!

Tonight I threw a lean chicken breast on the George and then when it was cooked I let it chill. Then I shredded it and added a little bit of light miracle whip, a little bit of mustard, 1/8c walnuts, and a small box of raisins for a tasty chicken salad.

We had smoked salmon last night with a garden vegetable blend with red potatoes. I usually get the jolly green giant vegetable blend (snappea's and peppers with red potatoes)that has the seasoning already in it, and then add a bag of mixed peppers and onions cut fajita style"ish", and then cook like 2-3 more potatoes and cook it all in a pan and add some fat free salad dressing. So we marinated a salmon with 1cup of Chardonnay and a 1/4 cup of soy sauce for an hour, got the smoker running, that's what boys are for, and then smoked the salmon for like 1-2 hours. IT Was delish..tonight we're having flank steak with some rice-a-roni brown rice thing. We're running out of food too, but hate going to the store...this weekend for sure!

Well, we have a busy night tonight - I get about 45 minutes at home to prepare and consume dinner.... so.... perogies! I thought they would be terrible, but they are only 50 calories each, and SUPER filling, so I am actually looking forward to it.

tonight, its my own special recipe soup. cabbage, zucchini, squash, cooked in tomato sauce and beef broth then ground beef cooked with onion and bell pepper add the 2 together.also seasoned with sea salt, pepper, garlic and herbs.
