Oy. Yesterday I forgot I had one of those extravagant law firm dinner things, and I was served up a heaping plate of delicious cheese (manicotti with mushroom gravy). It was delicious, but super-fatty AND made me totally sick since I haven't eaten that much cheese in like a year. Next time, more self-control with the lactose.

Today

Breakfast - omelette with grilled tomato and one slice wholegrain toast
Lunch - Salad
Dinner - Lentil pattie burger (wholegrain bread x 2, cheese, tomato, lettuce, onion)

Exercise - 1.5 hours this morning - boot camp and running there and home again
- RPM class

I'm trying to find ways to incorporate more beans into my diet. How did you make that lentil burger?

The one I am having tonight is just a bought one from Woolworths

But usually I'd use canned lentils mashed with a little potato & breadcrumbs with an egg to bind it - much like making tuna or salmon patties. The burger is more delicate than a beef pattie would be so you need to be a bit careful.

As for incorporating beans...try using a bean puree or mash instead of potato mash. I like using cannelini beans for that with a little lemon and garlic. It's excellent served under fish or steak.

I also use butter beans in salads and I LOVE having a 5 bean mix (canned - kidney, butter, cannelini, pinto and one i can never remember) with beetroot mixed leaves and a dash of sweet chilli to dress.
