Had to share my new fav treat !!

  • SOOO... You may all be aware of this-- but I wasn't and I'm REALLY excited.

If you buy a cake mix, (I used Duncan Hines Moist Deluxe Strawberry Supreme because it's all I had) and add a cup of water and a 12oz can of diet pop (I had Diet Coke Plus)-- mix it together and bake for about a half hour--- it is SOOOOOOO good. It comes out light and fluffy from the air in the pop and it only has the cals/fat/etc of the orig. mix. Seriously.. it's amazing.

I know this is a reciepe thing-- but I thought you girls would enjoy it!
  • Wow! What did strawberry cake and Coke taste like together though? Do you not even taste the Coke? My husband's family from West Virginia make "Coca-Cola Cake," which reminded him of prune cake but was as heavy.

What other cake/soda combos work well?
  • Wow that sounds delicious! I am going to try that tomorrow. Can you use any diet soda? (Pepsi, sprite etc)
  • that sounds cool! i want to try that. you just eat it like a cake?
why do it this way as opposed the regular way to use the mix? to save the calories of the eggs and milk? or does it just taste cool?
  • I've heard of this... did it really taste good?? I'm so tempted to make it!
What temp. do you cook it at?
Someone told me that white cake was tasty with Sprite Zero.

P.S. Did you frost it? Anyone have any ideas for low-cal frosting?? Cool whip or FF pudding maybe?
  • try fat free cool whip to frost, the calories per serving are low as well as there being no fat. Just frost it lightly!
  • It actually came out pretty fluffy-- even my DB ate it-- and he's fussy (I think he had 2 slices!) The center was a little dense-- but I think I could have gone with a little less water-- maybe a can of pop and a half a cup of water? The batter was pretty watery, so I think that would fix the prob. I would imagine that you could do it with any soda/cake combo-- I just used those because I had them-- I bet Sprite Zero would be good with White cake-- or Diet Gingerale and Spice Cake? Or Cherry Coke Zero and Chocolate? Let me know what combos you try.. I could barely taste the pop.

I was thinking ff cool whip would be yummy-- you can mix it with sf pudding mix and it comes out really good and a little thicker-- or even mix with ff sour cream for the spice cake.
  • Oh-- I baked it at 350 for about a half hour

    ^^ Thanks!

I'll definately have to try it! Diet ginger ale sounds good!
  • My mom's recipe for this from her WW leader called for one can of soda and no water, and baking according to the package directions. It baked up very moist, but it didn't raise much, so when I made it, I added a pinch (maybe 1/2 tsp) of baking powder, which did seem to help, and it also seemed to be done a little before the boxed directions indicated (though that might have been my oven).

The texture is different than when made the "regular" way, but it was very good. I liked the extra moistness because it didn't need frosting or a glass of milk like drier cakes seem to.
  • actually, I experimented with this a lot! the best way I could get the cake to come out "normal" was one can of diet soda, no water, and just 2 egg whites (35 calories)! The cake turned out great and was just around 80 calories for a cupcake sized piece.
  • I made this recipe with one egg and a can of diet soda. I used devil's food chocolate cake with a waist watcher's brand of diet wild berry soda. It was yummy and fluffy. I put fat free cool whip on top.

    Yum-- that sounds sooo good.

I'm definetly going to play around with this a bit-- I'd like to figure out a breakfast/bran muffin version.
  • I discovered this a few weeks ago! It is absolutely amazing! lol... my boyfriend and I used to make cakes and brownies a lot before we started dieting, but when I heard about this I was sooo amazed lol... I actually don't put any water in it, just a can of diet soda and the cake, and it is soo good, if not better than the cakes with all of the junk in em.

Kylie H.--- Strawberry cake mix is really good with Diet Mt. Dew instead of Diet coke.. try it!
