Default Rockinrobin - mashed cauliflower recipe?

Hey Robin, my boyfriend loves cauliflower and I'd love to try your mashed cauliflower. Can you give me some tips, I am not a big cauliflower fan and have never tried it before. Thanks!

I'm not Robin, but I've got a recipe for Mashed Cauliflower. It's a Low Carb recipe I don't know if Robin's is different, but here's one idea for you, anyway!

Hi Glory. I've been away this weekend, or I would have answered you sooner. Just got home a little while ago.

True I eat cauliflower about 6X a week, I LOVE the stuff, at a mere 28 calories a cup and lots of fiber, I find it EXTREMELY satisfying - but not mashed. I eat it one of two ways - either simmered in a little chicken broth for about 7 minutes or roasted in the oven. Every now and then, I will screw up and overcook it. I hate it mushy, so then I'll just take a fork and mash it up. But that's about it, nothing special. Sorry, I couldn't be of more help.

Robin, do you add anything to your cauliflower? I so love cauliflower, but have always put marg. and salt on it.any suggestions would be grateful.

Have you looked up recipes for Cauliflower? I think curry and cauliflower go well together. If you like butter, have you looked at trying something like butter buds?

Experimenting with veggies really is key to enjoying them

Smiley, I just cook it in a little chicken broth. That gives it lots of flavor. I use the powdered consomme and add it to the water.

When I roast it in the oven, I spray a large cookie sheet with cooking spray, add the cut up florets and either add tons of chopped fresh garlic and a little sea salt and give it another shot of the cooking spray or I add different spices, like onion powder, sea salt and a little black pepper or Mrs. Dash. I spray it with the cooking spray and put it in the oven at about 400 degrees for about 30 minutes, til it starts to get a little brownish, turning it a few times.

Nelie's right, the key to making veggies work for you is experimentation. I hope this gives you some ideas. Then you can play around with it and find what you like.

Thank you, Robin & Nelie for the idea's. I would never have thought of putting curry or onion powder on cauliflower. I learned to cook at the age of 17,by my ex MIL and everything she cooked was high cals. and fat, lots of salt ect. It's only been the past several years that I have tried other healthier meals,but I"m like a beginner cook. I don't know enough about veggies and spices ect. and I get bored easy,can you believe I have never eaten squash. I will try the spices on the cauliflower, and if anyone has any suggestions for new things for me to try it's greatly appreciated.

Curry on cauliflower is really really good. You can make a fairly low calorie curry sauce using chicken broth instead of milk. I like to cook the cauliflower so it's tender, but not mushy, then pour the sauce over and bake it for about 10 minutes (but in a pinch I just add the sauce and serve ) I imagine you could add curry powder while you're roasting too.

I've seen mention on some threads where people mash it and add some Laughing Cow light. I've never been able to get the Laughing Cow to melt however, so end up with lumps of it in the mashed caulifower.
