new found love of peppers!
glorious red, orange and yellow peppers were on sale for 99cents a pound here (they're normally 2.99) so i thought i'd try stuffin' some!
omg they're soooooooooooooooooooooooooooo gooooood!!!
i mixed ground beef & ground turkey, onions, cooked brown rice, corn and tomato sauce, spooned it all in and baked 'em and at the very end a sprinkle of low fat cheese on top, and drooooooool worthy!
i froze a few to see how they hold up ~ if they're still yummy i'll make a million of 'em this weekend heheheheh
i love finding something else yummy to eat!

I made cajun-shrimp stuffed peppers the last time - delicious.
Yellow and red peppers are probably one of my favorite vegetables. I like them chopped up in a stir-fry, sliced raw with other vegetables (and then dipped in hummus), etc. I often buy a bunch of them on sale and slice/dice them and freeze. They make great additions to a frozen pizza, homemade chili, casseroles, etc.

99 cents a pound??!?!!?!?!?!?!??!?!?! They're normally $2 a piece here... yes a piece....as in PER PEPPER!! I LOVE them, especially the red ones, they are so sweet to eat!! Love stuffed peppers too

I love stuffed peppers, but I can`t get a hold off ground turkey. So far my best bet is to buy some turkey breast, boil it to death, and take it apart with a fork.
Anyway, I love adding peppers to my rice. I make a sort of spicy fish soup with both red and green peppers. I fry green peppers with red onoin and yellow chili pepper in a teeeny bit of olive oil and put that on my meat or rice. I`ll cut it up in little cubes and put it in my ommelette. It goes in all of my stews. I must be obsessed!

I LOVE peppers. Cut up in a salad. Strips to munch on. Roasted in the oven. In stir fries.
