ok here is it:

2 8oz. pks. philadelphia cream cheese
1/2 cup sweetener (I use spenda)
2 eggs
1/2 tsp. vanilla

Soften cream cheese about 40 seconds in microwave. Add other ingredients. Beat with mixer till smooth. Pour into 12 muffin pans lined with the papers. Bake at 350 for 20 min.

hear the carb count was about 2 per muffin - low carb friends had it posted

Sorry...I haven't been on for a few days! Glad you found the recipe...and yep, that's the one I use! Of course I have to tweak it a bit...LOL.

*I love them with sugar free chocolate chips added to them
*Sometimes I add in a little bit of one of the Davincis syrups - Strawberry or White Chocolate are both AWESOME!
*If you haven't made them yet, just realize they will be UGLY when they start to cool because they will fall - then you just have a great excuse to put some LC Whipped Cream or Twist (LC Nutella) on them - YUMMY!
*You could crush some almonds, mix with a little butter, and pat some of the mixture into the bottoms of wrappers for a little crust.

If I think of some more stuff, I will let you know. I hate eggs and pretty much any other typical breakfast food, so I have these basically every day for breakfast and love them!

I just made these about an hour ago, pretty good. I definately think I'll have to add something to them next time though. But it's nice to eat something that resembles a muffin.
