Talking Great fake french fries

This might sound unconventional, but it's really good:

Parsnip Fries

1 pound parsnips
cooking spray
salt and pepper

Preheat oven to 450 degrees. Spray baking sheet with cooking spray.

Peel parsnips and cut into French-fry strips. Arrange in single layer on cooking sheet and spray with cooking spray. Season with salt and pepper.

Bake for 20 minutes, then use a spatula to turn fries over, bake another 10 minutes.

Enjoy!

Instead of salt and pepper, you can season them with various seasoned salts (garlic, cheddar, parmesan, nacho).

Yum! I love parsnips but I don't eat them too often because they have a high GI. I do make something similar with sweet potatoes.
