I love cooking with my crockpot!
Try this site, has a TON of lowfat crockpot recipes. I've tried a few of them and haven't been disappointed yet. Some of the recipes give nutrition information and/or WW points.

My most favorite recipe is a simple chicken recipe:
Take 1 whole fryer chicken and place it in the slow cooker with about 1 cup of water. Put on low for 8-10 hours.
When the 8-10 hours is up take the chicken out of the slow cooker. Dump all of the juice into a measuring cup and let sit for about 10 minutes. All of the fat will settle onto the top so I just use a turkey baster and suck all the fat off. Take the remaining juice and mix it with 1 tbsp chicken oxo. Bring to a boil. Mix together 1/2 cup water and 1/4 cup flour. Then whisk that into the chicken juice. Boil till thickened.
The chicken will fall off the bone because it's so tender and you just dump the chicken gravy over top of the chicken. Yummmm!

a super easy crockpot meal ....
4 boneless skinless chicken breasts
about 1.5-2 cups of salsa
a can of corn and a can of black beans( i suppose you could use any)
just throw it all in and let it cook for 8 hours on low...
you can eat the breasts as is, or shred it with 2 forks and its a wonderful filling for a tortilla, with a little sour cream on top....YUMMY!

I did the chicken with Salsa yesterday. Well actually it was too late to crockpot it so I did it in the oven. It was SO good and I had plenty of shredded chicken leftover for salad today and probably tomorrow! i will do it in the crock next time so it will really soak in the flavor. YUM!!
