Default Any tried and true eggless cake/cupcake recipes?

Let me first say, I should have been experimenting sooner. 'nuff said

My daughter has an egg allergy. So she is restricted but we are not vigilent in eliminating eggs. But she does not enjoy cookies, cakes, etc. I have a baking without eggs cookbook where some of the cookie recipes are working.

Her birthday is this weekend. I would normally buy a cake/cupcakes but thought I would make some for her. I can try a recipe from the book, but thought I would ask if anyone had a recipe they have tried in the past?

If she likes chocolate:
WACKY CHOCOLATE CAKE
1 1/2 cups flour
1 cup sugar
3 Tbs cocoa
1 tsp Baking soda
1/2 tsp salt
1/3 cup oil
1 Tbs vinagre
1 cup cold water
1tsp vanilla
Mix dry ingredients in a large bowl, add oil & vinagre then cold water & vanilla
mix well . Bake 20-30 min at 350f.
This makes a great eggless cake!

one of my friends made me the wacky cake when i was vegan for my birthday one year. When you are used to no eggs it is to die for She sprinkled mine with powdered sugar and baked them into mini cupcake tins

I have been making regular cake mixes but instead of using eggs,butter or oil, just use the cake mix with soda water. About 12 ounces should work. The cake will not rise as much as it normally would but it is very good. I use the cool whip lite or free as an icing and no one in the family even noticed it. Everyone loved it. I would recommend the soda water for any light colored cake. A great idea is a chocolate cake mix with a Diet Cherry Vanilla Dr. Pepper. Awesome! You could use a variety of the Diet Rite flavors too.

Default An amazing eggless & oil-free cake recipe...

A friend gave me this recipe from Weight Watchers:

Any chocolate cake mix
1 can of Diet Rite Red Raspberry soda

Mix the two together until fizzing stops. Bake the cake as normal. Frost with fat-free or low-fat Cool Whip once the cake has cooled.

Another variation is the Jello Poke Cake recipe:

You could basically use any flavor cake mix (a white cake or coconut cake mix seems to work well because you can see the pink color inside), a can of diet soda (maybe a Diet Sprite? Diet Rite Red Rasperry?) and bake as above. Most people like to bake 2 9" round cakes when doing the poke cake recipe. Once the cake comes out of the oven, poke holes all over with a fork.

Take 2 small pkgs Sugar Free Black Cherry Jello (or Cherry, Strawberry, Raspberry) and mix with 2 cups boiling water (until Jello completely dissolved). Pour the Jello all over the cake.

Put in fridge 3 hours until cake completely chilled.

Frost with (Fat Free) Cool Whip. Garnish with maraschino cherries, raspberries or sprinkles.

I think your daughter would love this recipe! And it's easy enough that she can help with the baking.

Default One more thing...

Also, you can go to AllRecipes.com and go to Ingredient Search. Use the keyword cake and omit the ingredient "egg". This will bring up several cake recipes without eggs!
