CHEESEBURGER QUICHE

1/2 lb. lean ground beef
1/3 c. chopped onion
2 beaten eggs
1/2 c. mayonnaise
1/4 c. water
1/4 c. heavy cream
6 oz. grated cheddar
4 oz. mushrooms

Brown ground beef and onion, drain grease. Add mushrooms and cook through. Mix eggs, mayonnaise, cream and water, cheese and salt and pepper, and pour over ground beef in a pie pan. Bake on 350 for 40-45 minutes. Let stand 10 minutes.

MEAT LOVER'S QUICHE

1/2 lb. browned ground beef or turkey
1/2 c. chopped ham
3 slices cooked crumbled bacon
6 slices chopped pepperoni
1/2 c. shredded cheese
1/2 c. ricotta or cottage cheese
4 eggs beaten
Parmesan cheese

Mix it all up well. Bake 325 for about an hour.

STUFFED PEPPERS

6 whole green peppers
1 lb. ground beef
1 small chopped onion
6 sliced mushrooms
1/2 c. shredded mozzarella cheese
1 1/2 c. ricotta cheese
1 1/2 c. sugar free spaghetti sauce
1 T. Italian seasonings
1 T olive oil

Sauté onions and mushrooms in olive oil until onions are slightly transparent. Add hamburger and brown well. Drain and remove from heat. Remove top of peppers, core and seed. Blanch peppers for 5 minutes, remove and drain. Place peppers open side up on an oven safe pan. Divide hamburger evenly among the peppers. Layer ricotta cheese, spaghetti sauce, mozzarella cheese and finally Italian seasonings. Bake at 350, 30 minutes or until the cheese is melted.

BROCCOLI, MEATBALL AND MUSHROOM STEW
8 oz. fresh or canned sliced mushrooms
4 T. butter or margarine
2 c. beef broth or bouillon
1 lb. lean ground beef
2 T. cold water
1/2 t. salt
1/4 t. pepper
1 c. broken whole wheat spaghetti
1 small bunch broccoli florets and stems
Parmesan cheese

Sauté mushrooms in butter till golden. Add the broth and bring to a boil. Combine ground beef, water, salt and pepper; shape into about 24 walnut sized meatballs. Drop into the simmering broth, cook for ten minutes. Add spaghetti and broccoli. Cover, cook for ten minutes, stir gently, occasionally. Adjust seasonings. Sprinkle with parmesan cheese before serving. Serves 4.

BEEF AND SAUSAGE CASSEROLE

1-1/2 lbs. ground beef
3/4 lb. pork sausage
1/2 c. chopped red onion
1/4 pound chopped mushrooms
3 crushed garlic cloves
1/4 t. Italian seasonings
1/2 c. shredded cheddar cheese
3 eggs
6 oz. can tomato sauce
1/2 t. salt
1/4 t. pepper
2 Italian sausage links

Brown Italian sausage links. Separately, brown ground beef and pork sausage. Mix 2/3 of the tomato sauce with the rest of the ingredients in a large bowl. Place half the mixture in buttered loaf pan. Layer the Italian sausage links lengthwise down the middle and cover with the remaining mixture. Spread the remaining tomato sauce over the top and bake at 350, 30 minutes.

KICKING HAMBURGERS

1 pound ground beef
1/4 c. finely chopped jalapeño chili peppers
1/4 c. finely chopped onions
1 T. minced garlic
4 slices pepper jack cheese

Mix all ingredients and form into four patties. Grill. Place a slice pepper jack cheese over top.

MEATLOAF

3# ground beef
2 T. chili powder
3 eggs
3 crushed garlic cloves
3 T. cilantro or Italian parsley
6 oz shredded sharp cheddar cheese
2 T. Worcestershire sauce
1 t. salt

Mix all ingredients thoroughly. Bake in a greased loaf pan 45-60 minutes at 375. Serves 6. 3.2 gm carbs/serving

I guess you could call this Hamburgers My Way as this isn't a recipe as such.

When you are making hamburger patties, add diced vegies to the ground beef before shaping it. You can add all or any of the following:

Onion, of course
Mushrooms (my favorite )
Minced garlic
Red or green pepper
Finely grated carrot
Zuchinni
Celery
Parsley or any fresh herb
Or ???

Don't add so many vegies that the meat won't hold together. And cut the vegies finely enough so that they will cook. I usually add a little tomato sauce to add extra flavour.

Fry or grill until done. Serve with the usual condiments.

This is a good way to get kids to eat vegies. My kids would eat anything grilled and put in a bun w ketshup. It also makes moist flavourful burgers -- a plus when you are using extra lean meat.

Poor Boy Fillets

4 slices bacon
1# lean gr beef
1/4 c. grated Parmesan cheese
2 oz. mushrooms stems and pieces, drained
3 T. finely chopped pimento-stuffed olives
2 T. finely chopped onion
2 T. finely chopped green pepper
lemon pepper and salt (to taste)

In a skillet partially cook bacon. Drain on paper towels. Combine remaining ingredients (except lemon pepper and salt) and shape into patties. Sprinkle w/lemon pepper and salt. Form in to 4 patties and then wrap each patty w/a bacon slice, securing w/toothpicks. Grill over medium coals about 7 or 8 minutes. Turn and grill 7 or 8 minutes more. (can be broiled instead).
