Chicken Carbonara Deluxe

Ingredients:

4 oz spaghetti, dry, uncooked
4 slices low sodium turkey bacon
½ cup chopped onion
1 garlic clove, finely chopped
2 cups cooked, chopped chicken breast
1/3 cup grated Parmesan cheese
1/3 cup evaporated skim milk


Preparation:

Cook and drain spaghetti as directed on package.

While spaghetti is cooking, cook turkey bacon in a sauté pan until crisp. Drain excess fat. Crumble bacon and set aside.

Cook the onion and garlic in the same sauté pan as turkey bacon until onion is tender.

Stir in spaghetti, chicken, cheese and evaporated skim milk. Cook stirring occasionally until heated through.

Toss with crumbled bacon.


Makes: 4 servings
Serving size: ¼ of recipe
LA Exchange: ½ Protein, 1 Starch, 1 Fat, ½ Dairy

Made this tonight and it is really good.
I used the shiritake tofu noodles in place of the spagetti.

I think when I make it again I will add some mushrooms and sweet red peppers to it.

Definitely a keeper!!

Deb - When you used the shirataki noodles, how much did you use and what was the revised exchanges on the dish?

Funny you made this tonight - I was looking at it yesterday and was thinking about making it this weekend. Thanks for being the guinea pig!

Cassi- I used 4 oz. (1/2 package) of the shiritake noodles. It counts as a condiment because there are only 20 calories in the 4 oz. serving. So it just replaced the starch. So it would be 1/2P V 1/2D and a condiment. The serving of just the carbonara looked small on the plate, but with the noodles and the side veggie I had it was really very filling.
