Default Chicken Satay

I found this recipe @ allrecipes.com, but I think it's orginally from SBD online.

This recipe says it can be served as an appetizer, but DBF and I have had it as a main course. YUM!

INGREDIENTS:
1 boneless, skinless chicken breast
1 tablespoon light soy sauce

PEANUT SAUCE
1 1/2 tablespoons trans-fat free peanut butter
1/4 teaspoon garlic powder
1/2 tablespoon fresh lemon juice
1/2 tablespoon light soy sauce
1/4 packet sugar substitute
1 1/2 tablespoons water
sprinkle of cayenne pepper to taste

DIRECTIONS:
To make peanut sauce: Place the ingredients in a bowl and stir well. Microwave for 30 seconds.
Pound chicken breasts between pieces of plastic wrap to a uniform thickness. Rub each breast with about 1 tablespoon of light soy sauce. Then season both sides of each breast with a couple pinches of salt and pepper. Place in a skillet and grill a couple minutes per side. Remove and cut into strips or cubes and thread onto skewers. Dip into peanut sauce and enjoy.

**To make it a main course, I cut the ckn into bite sized pieces and let them sit in some soy sauce for about 15 minutes. Then cooked them in a pan w/ some EVOO.**

(Serves 2 as an appetizer, 1 as a main course)

mmm... that sounds good! I LOVE peanut sauce. Thanks for posting the recipe.

That sounds wonderful. I will make it soon. I like to have chicken satay with cucumber salad.

1 cucumber, sliced thin
(Slice, salt, and place in ice water for 30 minutes. Drain & use)
1/2 red onion, sliced thin
Vinegar to cover all (I use apple cider vinegar) + one packet Splenda (or just use rice wine vinegar and no splenda)
Salt, pepper, cayenne
Can also add chopped jalapeno (fresh) if you have one

Let marinate for at least 1 hour or more before eating.

I make a Rachael Ray chicken satay with a giant stir-fry that is SO yummy. Just cook the chicken in a wok with snow peas, shredded carrots, red pepper, onion, and garlic. It will expand the dish to be huge! Then just dump some of your peanut sauce on top of the whole thing. MMMM.
