Default Mediterranian Chicken

Easy to make, one dish cleanup, juicy and flavorful-and I used to eat this all the time before I was low carbing just because it's good! It's low-carb, low fat, AND low calorie.

4 chicken breasts-I cut them in half lengthwise
1 can of diced tomatos with garlic
salt, pepper, parsley, onion salt, oregano

Preheat oven to 350. Season chicken to taste on both sides with above seasonings. Pour can of tomatos over chicken. Bake uncovered for 45 minutes. I don't know exact carb count per serving, but the can of tomatos I use lists that 1/3 of a can has 4 carbs, and you won't be eating a third of the can on just one piece of chicken, so go ahead and have a couple!


I've had variations of this dish in nice restaurants. It also works well on baked fish.
