Default Recipe for a Angelfood berry muffin

Has anyone heard of these or something similiar?


I am looking for some different dessert recipes especially things that can be made in small portions so not as tempted to eat the whole cake!!

Here's a recipe that I found. I am sure you could substitute the blueberries for other berries or do a combination of berries. I hope this is what you were looking for. They sound good.

Blueberry Angel Food Muffins

1 1/2 cups egg whites (from about 1 dozen eggs), at room
temperature
1 1/4 teaspoons cream of tartar
1/2 teaspoon salt
1 1/2 cups sugar
1 1/8 cups sifted cake flour
1 teaspoon pure vanilla extract
1 lemon, zest freshly grated
1 1/2 cups fresh or frozen blueberries

Glaze:
3 tablespoons lemon juice
1 cup confectioners' sugar

Preheat the oven to 375 degrees F.
In a mixer fitted with a whisk attachment (or using a hand mixer), whip
the egg whites until foamy.
Add the cream of tartar and salt and continue whipping until soft peaks
form.
With the mixer running, gradually add 1 cup of the sugar and continue whipping until stiff and the sugar has dissolved, about 30 seconds.
Sift the remaining 1/2 cup sugar with the pre-sifted cake flour 3 times.
Fold into the egg whites, then fold in the vanilla, zest, and blueberries.
Scoop the batter into paper lined large muffin cups.
Bake until light golden brown, 25 to 30 minutes.
Cool to room temperature.

Preparation:
Stir the ingredients together until smooth.
Dip the tops of the muffins into the glaze.

Here's another recipe, but it doesn't use berries. It uses pineapple and mandarin oranges in a can. This recipe actually had the nutritional info. Plus seems easy peasy to make by using a box of angel food cake mix.

Angel Food Pineapple Orange Muffins

One box fat free angel food cake mix
One (14 ounce) can crushed pineapple with juice, don't drain juice
One (10 ounce) can mandarin oranges in juice, drain juice
Zest of one orange

Preheat oven to 350 degrees.
Line muffin pans with 24 paper liners or spray with nonstick cooking spray.
Combine first three ingredients and mix well. Blend rind in at the end.
Fill muffin cups approximately 3/4 full.
Bake approximately 15 minutes.

Calories: 48
Total Fat 0
Cholesterol 0
Carbohydrates 2.6g
Sodium 1g
Protein 0.2
Fiber 0.3

Angel Food Muffins
1 box angel food cake mix
1 can light pie filling

Combine filling and mix only. Spoon into Pam-sprayed muffin tins. Bake according to package directions.

Weight Watchers: Filling 0 points; cake mix 3 points for 2 muffins.

Ok.. so I'm having fun finding recipes.
