Default Wave 1 Stuffed Peppers

I made this for dinner and thought I would share it:

Stuffed Peppers

2 bell peppers
1 cup of cooked brown rice
6 ounzes of very lean ground beef
2 tablespoons chopped onion
red pepper flakes to taste
pepper to taste
1/2 Tbsp oregano
1 cup diced tomatoes fresh or canned
Parmesan cheese (optional)

Cut peppers in half length wise and remove seeds and ribs. Boil the peppers for 5 minutes

Meanwhile brown beef with onion, then drain. Return beef to pan and add rice, seasonings and tomatoes. Stir well.

Lay the peppers skin side down in a large baking dish, fill each half with beef mixture ( you will need to pack it in as the peppers end up overfilled). Place dish in a 350 degree oven. Carefully pour about 1/2 cup of wtaer into the bottom of the pan around the peppers. Cover with aluminum foil and bake for 35 minutes. If using cheese it on the peppers during the last 5 minutes of cooking and let the peppers finish cooking uncovered.

Serves two. Enjoy!

This sounds really good; but I have question.

Usually when I make stuffed peppers, I put them in my large muffin tin to keep them from falling over during cooking. Would that work for this recipe, or do you have to have the water in the bottom of the pan during cooking?

Any thoughts?

That would probably work too, although I've never tried it that way. I usually serve two stuffed pepper halves rather than a whole pepper so I can get them to lay fairly flat in the pan. Let me know how it works out for you.

Just a thought - I tried these but substitutued the beef for tuna. They were yummy, thanks! (oooh actually I bet chicken would be good too!)

ahhhh wonderful. i subbed a few things and they came out amazing. i used:

bulgur instead of rice
textured veg protein instead of meat
spoonful of light ricotta cheese/sprinkle of nutritional yeast on top instead of parm
cumin and cinnamon for the spices

I will definitely try these. It is very similar to the recipe I already use for stuffed peppers. Thanks for the idea, I am new to this diet and need all the tricks and recipes I can get.

I made these with yellow and orange bell peppers and used turkey and brown rice. I found an easy recipe for baked brown rice. I also added hot chile garlic paste to mine because I love things that are spicy. Very good recipe. Thanks!
