Default Roasted Vegetable Spread

I'm not sure what the protocol is for posting modified recipes, but I have to give credit where credit is due. This is a recipe that I saw on an episode of Good Eats, just tweaked a little bit to make it SB-friendly. (The original recipe can be found on the Food Network web site.) I love this stuff!

Roasted Vegetable Spread

1 red bell pepper, sliced thin
1 medium onion, sliced thin
1 small zucchini, sliced thin
4 cloves garlic, peeled and crushed
1 tablespoon olive oil
8 oz. LF/FF cream cheese
1 1/2 teaspoon dried parsley
Salt
Pepper


Preheat oven to 400F. Place bell pepper, onion, zucchini and garlic into a large bowl with the olive oil. Toss to coat. Spread evenly on baking sheet and roast, tossing occasionally, until they are soft and begin to turn brown around the edges, approximately 30 minutes. Cool completely.

Place vegetables in food processor with cream cheese. Process until combined and spreadable - enough to leave some little chunks of vegetables in the mix. Taste and then season with salt, pepper and dried parsley if needed.

I spread this on celery or WW crackers as a snack.

It sounds good, but why is this in phase 2? It looks phase 1 to me.... I bet a lot of folks on ph1 having trouble getting their veggies in and who are tired of ranch dip or hummus would love this!

I thought about putting it on Phase 1, but I used real cream cheese instead of cream cheese substitute. Last I checked, we could only do real cream cheese on Phase 2. If it can go on Phase 1, that would be great!!!

Phase one food list
CHEESE (FAT-FREE OR LOW-FAT)

Look for varieties that have 6 grams of fat or less/ounce
American
Cheddar
Cottage cheese, 1-2% or fat-free
Cream cheese substitute, dairy-free ****
Feta
Mozzarella
Parmesan
Part-skim Ricotta
Part-skim String
Provolone
Swiss


I believe this is what she meant.....it's real cream cheese , not dairy free , but it is fat free or reduced fat.

surfer, you are correct. I meant "real" in that it's cream cheese, not cream cheese substitute.

Yes, I realize that dairy-free cream cheese is on the list, but so is lf or ff - look under "CONDIMENTS AND SPICES" (don't know why it's there of all places): Cream Cheese, fat-free or light - 2 TBS
