Morning Chiquitas;



I was experiementing this morning with something for breakfast. It came out great. I dirtied up just about every kitchen appliance I have!

Mock Waffles

2 eggs - I beat them in my Cuisinart with a wire wisk until fluffy
1/4 c. cottage cheese - I put this in my mini-food processor to puree
1/2 tsp baking powder
1/2 tsp vanilla
1/2 tsp cinnamon
Few grates of lemon rind
1 t. fresh lemon juice
1 pkg "blue sugar"

Mix together well. Put in waffle iron. Made two sets of waffles. But it counts as one serving. I gave the finished ones a few squits of I Can't believe it's Not Butter Spray and some SF syrup.
