Default Dessert Ideas

I just started on this plan an have a real sweet tooth. Any ideas for dessert? I'm on the Red Plan. Thanks!

Take a rice cake, put some peanut butter on top and some chocolate syrup (Hersheys Lite) OR, Mary's thing: nuke frozen blueberries and add some cool whip free and a crumbled graham cracker (I do mine without the cracker) OR my old WW recipe, put cool whip free between two squares of graham cracker and freeze for an ice cream sandwich. (LOL- can you tell I like to EAT?!)

I also saw a recipe today to blend ff cottage cheese, ricotta cheese (equal amounts) and raspberries to make a mousse, then layer with kashi crunch and other fruit, like a parfait.

Here's a few I liked from the cookbook.

Apricot Custard
1 F, 1/2 P, 1 D (4 oz)

3 med fresh apricots chopped
1 egg beaten
1/2 C skim milk
1 packet sugar subsititute
1/4 t vanilla
dash of ground nutmeg

Place chopped apricots into custard cup or souffle dish. Place in a shallow baking pan.

In small mixing bowl, combine the egg, milk, sugar subsitute & vanilla. Pour egg mixture over apricots Sprinkle with nutmeg.

Place the baking pan with the cups on the oven rack. Pour boiling water into baking pan around custard cups to a depth of 1 inch.

Bake in a 325 oven for 30-35 mins, or until knife inserted near the center comes out clean.

Raspberry Whip
1 serving = 1/2 frit, 1 dariy (4 oz)

Make 2 servings

1 C fresh or frozen raspberries
1 4-serving packge sugar-free raspberry flavored gelatin
1 C boiling water
2/3 C cold water
8 oz non-fat vanilla yogurt

In a small bowl dissolve gelatin in boiling water. Add cold water. Cover and chill for about 45 mins, or until partially set (consistency of unbeaten egg whites).

Add yogurt. Beat with electric mixer on med speed for 1-2 mins, or until light and foamy. If necessary. chill mixture until it mounds when spooned.

Place raspberries in 2 small bowls. Spoon 1/2 gelatin mixture on tope of raspberries in each bwol. Chill 30 mins or until firm.

Strawberry Shortcake
1 F, 1 S, 1 Vanilla LA drink mix

12 small strawberries
1 rice cake
1 T lemon juice
1 Vanilla LA drink mix

Place rice cake in a small bowl.

Prepare Vanilla LA drink mix with 4 oz water. Add lemon juice.

Place strawberries on top rice cake. Pour drink mix over strawberries.

Mock Apple Pie
1 S, 1 F

2 slices melba toast
1 small apple
dash of nutmeg
dash of cinnamon
1 packet sugar substitute
1 T skim milk

Dice apple. Mix with nutmeg, cinnamon, & sugar substitute. Add mile.

Spray small pie tine with Pam. Line bottom with melba toast. Top with apple mixture and bake at 350 for 20 mins.

Bread Pudding
1/2 P, 1 S

1/4 C eggbeaters
2 t skim milk
1 t vanilla extract
1-2 packets sugar substitute
1 slice diet bread

In a bowl, mix eggbeaters, skim milk, cinnamon, & vanilla extract.

Tear bread into small pieces & add to mixture.

Place in custard cup. Set cup in baking dish containing 1-inch water.

Bake at 350 for 30 mins.

Default L A Lite Chocolate Blizzard

This blizzard tastes just like the one from Dairy Queen, and counts as 2 L A Lites!

L A Lite Shake (Vanilla or Chocolate)
L A Lite Bar (Caramel, Cookie Dough, or Double Chocolate)

Just make the shake any way you choose (add milk or yogurt if desired)
Freeze an L A Lite bar and crush it into pieces.
Stir the pieces up into the shake and place it back into the freezer for about 10 minutes (for thickness).
Add low-fat whipped cream, and enjoy!!!

Take a small apple and slice in thin slices on an ungreased cookie sheet. Sprinkle with cinnamon and Splenda. Then sprinkle 1/4 cup raw oats and then add more splenda and cinnamon. Dot the top with 1 Tbsp low fat margarine. Bake for about 12 minutes at 375.

I fruit, 1 starch, 1 fat (You could add 1/2 cup lowfat vanilla ice cream - another starch)

Crush a lowfat graham cracker and mix with 1 Tbsp melted lowfat margarine. Press into a small bowl. Add fiber one keylime yogurt and freeze for 20 minutes (or longer if you want)

1/2 dairy, 1 starch, 1 fat
