Lunch today is leftover beef stew from last night.

I'm always amazed at how low cal a beef stew can be, yet soo satisfying.

I just had lunch, but this thread is still making me hungry!

I had this for lunch:

1. One 2oz beef/pork hot dog with sauerkraut on a white bun (not the best choice, yeah...It was a leftover hot dog from a pack we bought at farmer's market, so at least they were better quality hot dogs, LOL)

2. A big, juicy fresh tomato from the garden

3. A big, crisp dark green bell pepper from the garden

I love veggies! Breakfast was steel cut oats with a tablespoon of peanut butter and 1/2 cup skim milk, so I'm doing well today in all.

Today I had a cous cous salad with chickpeas, pine nuts, dried apricots, prunes and spring onions, with yoghurt and two apples. And some Green & Blacks...

What are Green & Blacks??

I had the same thing I had yesterday (salad w/chickpeas and lots of veggies) because I liked it so much. Actually, I eat so many little meals that I don't really know which is lunch. I suppose the one closests to a normal lunch time??

I had leftover homemade chicken fajitas with two whole wheat tortillas. Chicken with green pepper, red pepper, onions, mushrooms, and zucchinis. Mid-afternoon snack was yogurt with fresh blueberries and strawberries and a Tbsp of grape-nuts.

well- I worked straight through lunch on a huge client account. I had a granola bar-- but for dinner I had a very light version of Chicken cordon bleu... one chicken breast sliced a piece of FF cheese and one piece of low fat low sodium ham baked with fresh garlic, pepper and a few sprays of Parkay spray. Green Beans and for a little treat, a small DQ Icecream All for under my daily calories! I sneaked a peek-- I'm now down 8 lbs too! But I promise not to look again until Sunday!

Today (Wednesday) I had 7 peices of lean smoked turkey (only 50 calories too!) 2 pickle spears (0 cal) 1 serving of WOW chips (75 cal) and 20 table grapes (90) cal. So lets see thats.....215 cal and that's a lot of food for those calories. This morning I had a special K cereal bar for 90 cal so I'm up to 325 for the day and I'm having a take out big grilled chicken salad for dinner tonight. Sorry if this is boring stuff... Posting it keeps me motivated!

Anybody else wanna share??

I just have to say that I love hominy. I think I'm going to have to eat it more often than I do.

Anyway lunch/snacks today are:
an orange
nonfat plain yogurt with blueberries and flax meal
carrots and hummus
brown rice with green beans, black bean/kidney bean/tomato mixture, eggplant/tomato mixture and hominy/fava bean mixture (basically small portions of leftovers over brown rice)

Nelie-- you eat so healthy! I wish I could eat more of the "health/super" type foods but I REALLY feel like I'm dieting then and it really plays mind games with me Maybe that will be the next phase into my diet... once I get the swing of things I can intro some of that food stuff.... GOsh, I feel so BAD in comparison to what you eat! You go girl!

What is flax meal? Sorry--- its probably a little dumb for me to not know but I don't know!

Gretchen, I try to eat healthy and really it has been a process for me. My current stage is trying to cut back on the amounts that I eat and to portion control myself. Also when I eat this way, I really don't feel like I'm dieting, but I also think it is because my taste buds have changed and I really like the food I eat.

I think flax has lost popularity in the US but it is making a come back I think. Basically flax seed is a tiny seed that is full of omega 3 fats and fiber. Those are the same fats found in fish and fish oil. Our body has a hard time breaking open the flax seed, but if you grind it up, you make flax meal. So I add a little flax meal to my yogurt because it adds fiber (helps fill me up) and a healthy fat.
