What are you making for Easter dinner?
 
I want to make something my family will enjoy as a main course, but lamb and ham seem so fatty. What are you making? I could use some inspiration!

I found a recipe for a spring pea soup that was low fat so I thought I would start with that, and I can easily come up with side dishes with all the great spring veggie out there :carrot:, but the main dish has me stumped....

We're having turkey. My husband's had a yen for it for a while, but with only two of us we don't do it very often. I got a turkey breast that I'll be roasting. Side dishes will be broccoli with cheese sauce, and toasted garlic bread. He's getting ham tomorrow at his Mom's, for Gem's 5th birthday.

My daughter and her husband have made a request for a beef roast with all the seasonings, potatoes and gravy, green beans with mushroom soup, cooked carrots, garlic bread and my homemade milk chocolate chip cookies. I don't have to worry about the cookies, because I don't like sweets, but the rest will be very tempting...;)

My folks and brother come over. So there are 7 of us.

My parents have requested ham and scalloped potatoes. I'll be making onion and cucumber salad, asparagus, peas or carrots.

Carrot cake for dessert.

My mom is buying roast chicken from a local deli (she cannot cook worth a darn). I have no idea what else she is making... I am making green-bean dumpling soup. If you know anything about that kind of soup - it is not healty... it is an old volga-german recipe from my grandma that I make. I am the only grandchild that cooks the german foods, and I am making it at the request of my grandparents. Don't know what else to expect... but since my mom will be attempting to cook, I'm sure I won't eat much.

Can I come to one of your places for dinner? My dh is working and I have no family or friends I can call on, so it's just me and the cat and some smoked mackerel and brown bread :( Does anyone feel sorry for me yet :(:(:(

I am going to the gym though :D Perhaps I'll see the Easter Bunny on the way!!!

One thing that we started last year, instead of candy and chocolates for dessert, we have jello-eggs! They were a massive hit at church and at home! Great tasting and low calories!

Oh Kykaree! I'd rather be in England with you! Because that would mean I'd be on vacation and not have to go to work Monday...

Though the smoked mackerel sounds like an acquired taste. :?:

I love smoked mackerel mixed with cottage cheese!!! It makes hubby wanna hurl, but the cat and I share it!!!!

Australia is even better, they have the Tuesday as a holiday as well as the Monday! Next year we should all run away to Australia for Easter!

Just thought I'd share the pea soup recipe as it was a huge hit and the non-dieters loved it!! It is from Gourmet magazine, but I changed it a little.

2 medium shallots, chopped (about a 1/4 cup)
1 teaspoon olive oil
1 (4-oz) potato, peeled and cut into 1/2-inch pieces
1 teaspoon salt
2 cups chicken stock
1.5 cups water
1 lb frozen baby peas (3 1/2 cups), thawed
1/4 cup non-fat sour cream
zest of half a lemon
2 tbsp lemon juice

Cook shallots in oil in a 3-quart heavy saucepan over moderate heat, stirring, until softened, about 2 minutes. Add potato and salt and cook, stirring, 2 minutes. Add water and simmer, covered, until potato is tender, about 15 minutes. Add peas and simmer, uncovered, 2 minutes. Purée in batches in a blender or use a hand blender (use caution when blending hot liquids!).

Mix sour cream, lemon zest, and juice in a separate bowl and put a small dollop on top of each serving.

Soup can be made 2 days ahead and chilled, covered. Each serving about 95 calories and 2 grams fat

Makes 6 servings (about 8 cups).
