Soup is a very good suggestion. Especially veggie soups. I make a soup out of every veggie I like (cabbage, green beans, mushrooms, diced tomatoes, cellery, carrots, green pepper, etc.) mixed with V8 juice and a packet of onion soup mix. Simmer until vegetables are tender. 1/2 cup equals 1 serving of vegetables. If you want to kick it up, use the spicy V8. Add some chicken or pinto beans if you want to add some protein.

Beans are a great way to get in protein (and some other nutrients), are inexpensive, lowfat and go in lots of dishes. What about quesadillas?? Quick, and not bad if you go easy on the cheese.
