Healthy Super Bowl Snacks?
 
Hi everyone - my boyfriend and I are having a superbowl party/housewarming (we just moved to a different apartment). We are inviting a lot of friends over, and I want to be able to feed them healthy things that they will still eat (ie, not just carrot sticks and celery). Any ideas for healthy appetizers that I can feed them yet not make it obvious that I am on a diet? I was thinking something easy like chicken or fish, but I have ZERO cooking skills besides my Foreman grill. Help!

how about bruschetta? Just toast some french bread and chop up some tomatoes, onions, and herbs.

With the chicken, maybe just grill them then have some bbq sauce on the side?

I still make all the dips I used to make but I substitute cream cheese and sourcream for low fat or fat free versions. I also bake corn tortilla's cut up for my own heatlhy baked chips.

How about a veggie pizza, its one of my most requested dishes anytime I go to a carry in. Also you could get some chicken strip tenders put them on skewers and cook them on your foreman & have some dipping sauce. Does anyone like shrimp? You can get a bag of the frozen shrimp put it on skewers do it on the foreman or just thaw and serve like shrimp cocktails. I don't really have a recipe for the veggie pizza I just know how I put it together if you want to email me I can write it out and send it to you. How about a bean dip using FF refried beans, salsa, low fat or FF sour cream, packet of taco seasoning, lettuce, tomato & green onions.....layer all of this and serve with baked nacho chips. We have Daytona 500 & Super bowl parties and I serve all these things and nobody knows the difference. Hope this helps ....

Here's one that's healthy: Spinach Dip

Very easy to make:

3 chopped shallot
250 ml Light Mayonnaise
500 ml Light Sour cream
1 pouch of non-diluted "knorr" leek soup mix (any other brand will do)
300 gr. chopped spinach

Mix everything and put at least 2 hours in the fridge before serving.

Serve with raw vegetables and/or baguette.
