blecch!!!! what's with the liver????? yeah, i know it's healthy, but face it: it's the major detox organ!!!!!!

I crave it sometimes, I think when I am low in iron. It happend this last week, and I was eating it for breakfast almost every morning. Today it was turkey brats and egg whites, cause I am out of liver. :-( Sometimes I crave tuna the same way.

Cottage cheese is incredibly versatile. I have a hard time getting protein into breakfast unless I'm eating egg whites, so I use Cottage cheese a lot. Especially during berry season. I just eat a cup of cottage cheese with a mountain of fresh blueberries on top. I stir it up (but that's just me). I've also used necterines, peaches, cherries, blackberries and bananas.

For lunch, I can eat it plain, or with a little garlic powder and tomatoes (in the summer).

You can also make really great lowfat dips and salad dressings with cottage cheese. For fruit, blend cottage cheese with a splash of milk and vanilla (sometimes splenda if I have a real sweet tooth) in a blender or food processor until smooth (it will look like yogurt). For salad, blend cottage cheese in the same manner but add herbs and pepper.

Cottage cheese dessert. Blend 1 cup cottage cheese until smooth. In a seperate cup combine sugar-free jello (I prefer lime) and 1 cup of boiling water until jello dissolves. Blend with cottage cheese (I also add lime zest). Pour into dish and refrigerate until firm.

Okay, I swear I don't eat it morning, noon and night, but it sounds like it. :)

Ooh, when I lived in Boise, there was something everyone called Mormon jello that was a great dessert (even Mormons called it Mormon jello--I'm sure there's probably another name for it, but that's what everyone called it). I made it the low-fat way using reduced fat cottage cheese, sugar-free lime jello, drained canned pineapple, and reduced-fat (or FF) Cool Whip--you just blend all that together (no water needed) and let it set. It's great!

Yet another way to eat cottage cheese -- 1 cup fatfree CC, 1 TBL salted sunflower seeds, .25 cup organic raisins

Then I eat a piece of fruit with it.

I really can't face much at breakfast
