I have a file on my computer where I stick ones I like, here are some:
Exercise:
Don’t think. Just go.
Whether it is a 14-minute mile or a 7-minute mile, it is still a mile.
Someone who is busier than you is running right now.
Strength is just what’s left after you’ve used up all the weak.
It never gets easier. You just get better.
Weight loss/diet:
I’m not losing weight. I’m getting rid of it. I have no intention of ever finding it again.
Do not reward yourself with food. You’re not a dog.
If you’re sick of starting over, you have to stop quitting.

Ooh! Good quotes there
I keep a Word document full of quotes for me. Here are some of them:
A body on the couch wants to stay there. But once a body is in motion, it wants to continue in motion.
Jeff Galloway.
The man at the top of the mountain did not fall there.
Losers say “I wish.” Winners say “I will.”
There is only one thing more painful than learning from experience, and that is not learning from experience.
Prove you’re worth a damn.
Randomly found this one in someone's sig on a bodybuilding site that also had a weight loss section. Not for everyone, but I like it.
Stick to it today... you can stick to anything for one day!
I saw an angel in the marble and I chiselled until I set it free.
Michelangelo
If hunger is not the problem, then eating is not the solution.
One of my favourites. I've had problems for years with binging and overeating. Eating used to be my reaction to any thing, any situation, any emotion I didn't want to/could deal with. Only, binges never solved any of my problems- they only exacerbated them.

do or do not - there is no "try"
also, my own:
eating a healthy diet is like living off your pay packet - once the money's gone, it's gone, and there is no more.
eating junk food is like living off your credit cards - sooner or later, you have to pay back all those calories and then some.

It is much easier to avoid bad foods when you're full of good foods.
The pain of being overweight is far worse than the pain of working out.
Eat for the body you want, not the body you have.
No matter how slow you're going, you're still lapping everyone on the couch.

Here are some of my favorites:
Success comes in cans, not in cannots.
Attitude is a little thing that makes a big difference.
Failure is the path of least persistence.
If you believe you can, you will. If you believe you can't, you're right.

Today I will love myself enough to let myself succeed.
Don't give up what you want most for what you want at the moment.
If hunger isn't the problem, then eating isn't the solution.
I forgive myself for having believed for so long that I was never good enough to have, get, be what I wanted.
