Per Bagel:
Calories - 137
Fat - 0.6
Sodium - 358
Carbohydrate - 28.9
Fiber - 3
Sugar - 3.7
Protein - 4.5


Recipe:

Bread Machine Bagels

For dough:
1 cup warm water
1.5 cup all purpose flour
1.5 cup whole wheat flour
1.5 tsp salt
2 T sugar
2.25 tsp yeast

For water:
3 T sugar

For baking:
1 egg white
1 T cornmeal

Add the ingredients for the dough to bread machine and set to dough.

When the dough is finished set it on a lightly floured surface to rest for 10 minutes.

Start water boiling in a large pan. Add 3T sugar.

Cut dough into 10 equal pieces and roll each piece into a ball. Flatten the balls of dough and poke a hole in the center of each. Twirl the dough on your finger to enlarge the hole and even out the dough.

Cover bagels with a clean cloth and let rest for 10 minutes.

Sprinkle a cookie sheet with cornmeal.

Carefully place bagels into boiling water and boil for 30 seconds on each side. Place briefly on a clean towel to drain.

Arrange bagels on cookie sheet and glaze the tops with egg white.

Add any toppings that you want at this time (sesame seed, poppy seed, etc.)

Bake for 20 minutes.

Tonight I'm making chicken parmesan from scratch. It'll be a little calorie heavy, but I burned over 1,000 calories at the gym today so I feel ok going over by a couple hundred. I'll post pics later!

roxy... one of your bagels is heart shaped. it made me smile.

i got a bread maker for my birthday a couple years ago and LOVE it. i might have to try those out.

Roxy - I've seen a similar recipe somewhere and never got around to trying it. I think I might try these out... But any ideas on why you have to boil it?

I made green chile chicken enchiladas tonight. It's usually a staple around here, but I haven't made them for a while... DH was glad to smell them cooking when he got home!

I made elk loaf for dinner last night.



I used 1 pound of ground elk, 1 egg, 30 grams of ground fiber one, garlic, rosemary, sage, parsley, salt, and pepper for 4 servings. In the picture it is sitting on bulgar wheat and has been topped with a bit of mozzarella. The elkloaf itself came in at 199 calories; 7.5g fat; 2.8g sat. fat; 133 mg cholesterol; 115 mg sodium; 6.4 carbs; 3.5 fiber; and 27g protein. The cholesterol could be brought down by using egg beaters or egg white. It was so yummy. That was my first time subbing the ground fiber one for breadcrumbs. I think it works wonderfully.

bumping this thread for food ideas... and to throw in a new one of my own

tonight's dinner was sort of an experiment. i got this lovely peach-brandy glaze from tastefully simple and really had no idea how to use it. well, more accurately, i had SO MANY i couldn't decide. since it adds a bit of calories to a dish (25 cals per tbsp) i figured i should put it on something light. originally it was going to be on a frozen veggie mix with shrimp and do a stir fry over rice. however, i didn't know we were out of shrimp (oops) and we have a bunch of potatoes that need to be used. so instead, i used a frozen veggie mix (broccoli, cauliflower, carrots) added onion and green pepper slivers, diced up a few potatoes and on my husband's request used turkey kielbasa as the meat. the finished product ended up looking something like this:



the whole dish contained about 1700 calories (and it was a lot of food!) so if you took a quarter of it (which ended up being about 2.5 cups) it was around 425 calories. sweet and salty thanks to the combo of the glaze and the kielbasa, but also full of good for you stuff in the veggies. i only ate about half of my bowl, but i will probably finish it tonight after the gym!

tonight's dinner was baked tilapia fillets seasoned with lemon juice, garlic, black pepper and italian seasoning. honey/cinnamon glazed baby carrots. and sauteed green beans and onions with garlic. approx 400 calories for the meal.
