HELP! I need a recipe for a cake.

  • My grandmother's birthday is next week, I would like to bake her a cake and I need some serious help. She's a diabetic, lactose intolerant and she's a vegan, so no eggs. O_O

    Can anyone help me?

    The third recipe uses sugar, but I'm sure you could use a sugar substitute. I don't bake sugar free, so you may want to ask someone else about ratios.

  • Mandalinn had a way of baking a cake using diet soda as sub for eggs and oils with a packaged cake mix, but I don't remember the proportions.
  • THe one I know is a cake mix and 12 oz of any kind of soda instead of anything else added. Just mix and the soda, spice cake and diet coke is a really yummy one!
  • My dad is a flax seed junkie, and he explained to me how to use flax seed as an egg replacement. I just found this site which explains how to do it and it looks like they used it in brownies and it wasn't too bad, so it might work for cake too?

  • One of the best one's I made was chocolate cake with diet cherry coke. Yum! I am almost positive you make it like the directions just using soda instead of the liquid ingredients. If you google it though there are lots of recipes like that!
  • I have made the cake using a can of soda, it works well but wouldn't be good for a diabetic as the mix contains sugar.

  • Be careful picking a packaged cake mix to use. Unless you pick one labeled vegan, many of them have dairy in them.
  • Here's a recipe we have used as a cake. If you use fleggs instead (1 T. flaxmeal whisked with 3 T. water per egg) and increase the baking soda a bit, it makes a lovely cake.

  • There's a cookbook called "baby cakes" I think, that has vegan and usually sugar free cupcakes.
  • Bought yellow cake mix and sprite zero. They are in the oven baking. Found a reduced sugar chocolate frosting, going to put 1/2 tsp on a cupcake (~25 cals) and see how it goes! Also bought the FF cool whip, going to try that on a cupcake as well tomorrow. My bf loves chocolate chip anything, so I bought some mini semi sweet chips and put a few (~20 cals) on top of 2 cupcakes to let him try them out

  • The cupcakes are amazing!!! They do not taste any different than "normal" cupcakes, and you can't taste the soda one bit!!

    I treated myself at lunch to a cupcake with the FF coolwhip (1/4 tsp) and then added 5 mini semi sweet choc chips. Freaking amazing!!! The calorie count was right at 100. Much better tasting than any of those 100 calorie packs, and definitely worth me running an extra 10 mins tonight just because I feel like cheated!
