Talking Healthy mini-meal ideas?

I'm not eating enough (again!) and it's really annoying. I'd like to cook up like 10-20 mini meals tomorrow and put them in the fridge so that I can just pull one out and eat it when I need to, instead of just not eating. (bad jessica!)

Anyone have any ideas? I'm not a really big meat eater, and I don't like veggies unless they're raw, so I'm finding it difficult.

What about just quick snack type stuff? Some of my favorites Babybel cheese and crackers, fruit with some PB, that type of stuff. I am also not a big meat eater so I am learning to head for fruit for snacks along with some healthy fats and dairy.

fruit with some PB would be good.
I have to avoid cheese right now because (embarassingly enough) cheese is my VICE. I can't portion control it yet.

I got a recipe from the WW section, a pound of hamburger/turkey, a box of stove top, and a cup of water, mix it together adn bake at 350 and make mini meatloafs in a muffin pan and you can freeze them for later etc.

I think they were about 150 cals. each.
Look at the weight watcher and south beach recipes they are a great resource!

I keep a raw veggie tray cut up. I tend to eat my fruits early in the day, otherwise the sweetness causes a craving for more sweet carbs later in the day. Also, laughing cow spreadable cheese and crackers, I'm not sure if you're cheese trigger is hard cheese or what, but these don't taste like cheese? They taste like yummy goodness!! Steel cut oatmeal you can make in large batches in the crockpot then portion those out in fridge, pop one in the microwave add a bit of agave nectar or cinnamon or fruit/nuts, thats filling and fairly low cal. I tend to stick with smaller meals too, it works better for me.
