Pumpkin in Oatmeal?

  • Am I the only one who hasn't tried this? How much do you use? Just a couple teaspoons? Does it really flavor plain ol oatmeal to taste like pumpkin pie? Do you just refridge the leftovers from the can?
  • I eat this almost daily and just blogged my recipe with a photo and nutrition info last week. It's so delicious!

  • I made a batch of steel cut oats with pumpkin last weekend and have stored the leftover in the fridge.
    I cooked One and half cup of oats with one and half cup of pumpkin. I also used pumpkin pie spice for additional flavor.
  • I did this for most of last winter, but haven't started it yet this year. No recipe, I guess I'll be making it up again. Then, I was cooking oatmeal on the stovetop, enough for the week. I added quite a lot of pumpkin, plus pumpkin pie spice, plus some orange zest and maybe some slices of ginger (fished out at the end) and extra cinnamon and some vanilla. And a bit of molasses. Then I reheated it in the morning with soymilk, and then stirred in some flaxmeal. I'd probably add some walnuts and yogurt too, and maybe some cranberries, this time around. I've thought about adding some applesauce or crushed pineapple, but I don't know.
  • thanks gals. Another quick question, for quick microwave oatmeal ( eat breakfest at work ) would I put the pumpkin in before i micro it, or mix it in after? I'm thinking before, but jsut want to make sure
  • I just read this idea online the other day and thought it was brilliant (I am new to oatmeal, having had it once so far :-) )
  • I usually add a couple large tablespoons and I put it in before I microwave. I also use a variety of spices (cinnamon, nutmeg, ginger) and some pure vanilla extract.
