Thank you everyone! I will definitely continue my search...either for the elusive Baked Tostitoes or for the wonderful 50 cal tortillas to make my own.
In the meantime, I will continue to eat my salsa on scrambled eggs, with turkey in a wrap and will also try the veggies too (thanks! I can't believe I hadn't thought of that!!). I have also been known to eat it "straight up"
As for a recipe, it is a little bit different each time but generally:
ripe tomatoes (from my back yard this time of year
)
a jalapeno or two (fresh and seeded)
a small can of diced chilis
lime juice
fresh cilantro
onions (white and/or red)
sometimes a bit of garlic too
I think that's it! With my new Vita Mix, I can throw it all in and it is ready in about 15 seconds. Yahoo!!
