Exclamation Hitting the Buffet Tomorrow!

Well, the BF called just a few minutes ago from work, and mentioned we had to get up extra early. When I asked why, he said we were going out on a business breakfast with one of his associates and would be hitting the buffet at one of the casinos.

I think I might have been terrified of the idea last month or any other time I've been on a diet, but I know I'll be fine. I've been to this particular buffet many times before (unfortunately, lol) so I do know they have lots of healthy choices like fresh fruit. I also know I have both the power and intelligence to have a sensible meal. I'll be able to finish once I'm full instead of having the mind-set to try to get my "money's worth" of the whole all-you-can-eat deal.

It's just so nice that I can confront what used to be such a scary, tempting situation with the confidence of knowing I can make the right choices.

Thank you so much everyone! I thought I'd follow up with how I did this morning.

I only had one plate! I immediately went to grab an apple and banana, then walked over to the section with the eggs, bacon, and the like.

As I walked past the waffles, the metal container holding them actually fell into the heated water. All the mini waffles were floating everywhere! Was it a sign?

But I scooped out a small spoonful of scrambled eggs, then eyed the chicken-fried steak. I wasn't sure if I really should have picked it up at the time, but when I got to the table I only took two small bites after having the rest of my meal. It so was nice that I could take a few tastes and not have to eat the whole thing in order to enjoy it! In the old days I'm sure I would have scarfed the whole patty down along with another plate full of sausage, bacon, and pancakes. Oh, and the waffles too.

Anyway, I made it out without any guilt and I'm rather proud of myself.

Thanks for the update, great job!

I made Seitan in a fake cheese sauce yesterday, it came out tasting not quite like cheese (I Think next time I will slightly alter the recipe) and my bf said, "What is this supposed to be?" (He wasn't being snide, he meant what kind of "version" of meat was it supposed to be as it was a vegetarian meal ) and I said chicken and cheese and he said that it tasted kind of like chicken fried steak!

I sat down to eat and he was right, it did kind of taste country fried steakish. haha. and I"m sure the recipe could be altered to make it taste even more so with some pepper and other seasonings that are country fried steakish.
The entire recipe for the sauce was about 700+ some calories. But it made a huge batch, I only used about 2 tbls and dipped my Seitan chunks in it, so the entire dinner came out to be about 400 calories for 4 oz of Seitan (cooked in olive oil, which is counted in the calories), and 2 tbls sauce ANYHOW>>>> ON TO MY POINT! *L* If you'd like the recipe I can post it. hehe.

That is if you are able to get to a health food/co op store cuz that is where you'd get the bulk of the ingredients.
