What I did this morning

Now I know that I'm having surgery soon. And while I hope hope hope that they are able to do it "keyhole" there is a chance that they won't be able to. SO I spent the morning cooking.

I now have:

10 pounds of chicken breast baked, cup and frozen into one cup bags. Cajun spiced, herb and garlic spiced and Thai spiced all with salt free seasonings.

4 family servings of ground turkey spaghetti sauce (3 cups in each container.)

4 family servings of ground chicken taco meat (3 cups in each container)

2 family servings of ground chicken and cabbage sloppy joe meat (3 cups in each)

4 family servings of ground turkey chilli to be put on potato's or whatnot (5 cups in each)

phew. That's done. My freezer is FULL and I am happy to have that prepared. I also enjoy chicken almost daily on my salads etc so this will make it easier.

I also stocked up on easy easy dinner ingredients like whole wheat naan bread (for mini pizzas, defrost chicken, cut up veggies and viola) tons of eggs, tons of frozen veggies, soup and organic mac/cheese for the kids, and lots of easy quick snacks like applesauce cups, dried fruit, yogurt and cheese sticks. I *think* I'm prepared. And if all else fails? We'll be eating well for quite a while!!! :carrot: :carrot: :carrot: :carrot: :carrot:

I did the once-a-month cooking thing through my church a few times and it really did make life a lot easier! I hope your surgery goes well and that you're up and around in no time!

What is is they say? "Failing to plan is planning to fail". Well failing is apparently NOT an option for you.

I love how you're not letting ANYthing stand in your way. NO EXCUSES. Your dedication is admirable.
