I've been eating celery, red pepper, cukes tomatoes and a little onion, chopped fine mixed with tuna and a tahini lemon dressing I make(Tahini, lemon juice, salt and pepper and water), mix it together and wrap in a wholewheat chappati YUM!

(Chappati is an Indian flat bread kinda like a tortilla)

All of your salads make mine kind of boring. Heck some days, I take spinach salads for a side to my lunch that consist of...just spinach. I think I will use some of the suggestions from everyone else though. I could start using them as the main dish of my lunch.

Lettuce
tomato
cucumber
onion
green peppers
mushrooms
bean sprouts
cheese
boiled egg
sunflower kernals

then I take fat free dressing and put it all over my salad, and I have like a tablespoon of full fat dressing on the side and dip my fork in it.

Bagged spring mix (mesculun, spinach, etc.), grapes, small tomato halves, pistachios, blue cheese crumbles, chicken breast, light Italian dressing.

My 2 fav. salads are

1/2 Head iceburg
2-4oz Shredded Chicken
1/4c black beans
1/4c corn
2tbs light sour cream
2tbs salsa
1tsp taco seasoning

I put the lettuce on a big plate, add the seasoning to the chicken and pile everything on top of the lettuce. SO yummy!

and the other one is

Baby Spinach
4 Strawberries
3-4oz Grilled Chicken
1/8c pecans
1-2tbs Light Balsamic vinaigrette
and occasionally some feta

Chop chicken, slice strawberries, add everthing to spinach and toss

Mmmmm, salad... I love salads! I just finished eating one massive salad for dinner, actually! Hehe. Though I must confess, I don't really make my own salads most of the time I have them, so I don't have any creative ideas for you or anything... Just wanted to share in the salad love, LOL!

It really is shocking how much your tastes change when you start eating healthily, because I used to completely LOATHE salads. Lettuce and a bunch of raw vegetables? Where's the flavor?! I'm gonna need some fat, salt, and carbs/sugar up in here before I go anywhere near this thing! Oh, how little I knew back then... Now I can't get enough of fresh veggies! (And fruit, which I didn't eat much of before, either! )

My homemade salads lately have been pretty basic- chopped romaine and red leaf with chopped purple cabbage.

My salads that are made for me at work have had an asian theme- cabbage, chopped red leaf and green lettuce, cashews, red peppers, chicken, pinneapple, and vinegarette. Yum.

I love salads and I absolutely love all your ideas! I'm gonna start experimenting a lot more with my salads as these sound so delicious
