Valentine's Day Breakfast Menu

    So first off I would just like to say that one of my co-workers today had his 10 year anniversary working for the company and cake was passed around. I had my celery and dip and passed on the cake!! Yay me!!

    Second of all, I was chatting with my husband earlier and we realized that due to work schedules we are unable to do a nice valentine's day dinner. So I decided to make us a Valentine's Day breakfast instead. I'm just going to list what I was thinking about cooking up and I was wondering if anyone could give me any comments on my menu or recipes of things that might work better!! I'm trying to keep to my diet while making us something yummy and special!!

    This is what I'm thinking:
    A few slices of Turkey Bacon (35 cal. / slice)
    1/2c Egg Beaters (60 cal)
    French Toast made with egg beaters and WW bread (approx 130 cal/slice)
    Potato-carrot pancakes (24 cal/cake + 13 cal/tbps FF Sour Cream)

    I need a good alternative for french toast topping as well!

    What do you all think? The total cals in this breakie is between 300 and 500 depending on how much you eat, but it's a special day and if I'm careful about my lunch and dinner I should be ok I think BTW...I put the recipe for the potato-carrot latkes below in case anyone wanted a good recipe

    potato-carrot pancakes:

    1 large potato, grated
    1 carrot, grated
    1 tbsp flour
    1 egg, slightly beaten (I even substitute egg beaters here to save a few cals)
    salt
    pepper
    onion powder

    Combine all ingredients, spray a pan or griddle with no-stick spray and cook them in 1/4 cup portions like pancakes.

    here's the low down per pancake (using 1/4 cup mix per pancake):
    24 cal, .8g protein, .2g fat, 5g carbs, 11mg cholesterol, 42mg sodium, .2g fiber.
