Default OMG!! I just "fluked" an AMAZING salad!!



Disclaimer: I'm not great with salads, I don't make too many, aside from Greek, which I LOVE (no oil, no onion) So I may sound like a dork getting excited over this!!!


So, I wanted some protein for lunch...and I thought I'd experiment a bit! I was really hungry and wanted something big.

So into my large mixing bowl, I threw:
3-ish cups chopped romaine lettuce
1 large tomato diced
1/2 a red pepper diced
2-ish cups chopped cucumber
1/2 cup 1% cottage cheese
1oz feta, crumbled
tiny sprinkle of balsamic vinegar
a tablespoon or so of the feta water

It's SOOooooo yummy! It's got some good protein from the cheeses, and it's SO huge that I can't finish it all.....for....298 calories!!!

Please forgive my silly excitement!

Does anybody else have ideas for yummy salads that are very low cal and high protein???

Dawnyal....yeah...most salads just don't have enough substance for me, and I'm left feeling hungry.
Also, I hate onions...all kinds....even red ones

Linda - sounds like a good one! I love me a salad! But I use lots of topping and barely any lettuce - I use shredded carrots, tomatoes, green onions, peppers and always do feta! Try putting some sliced almonds on it for a little extra crunch! I sometimes put chicken breast on it - marinated and sliced.

You know what else is a good snack? Tuna on rice cakes! I have been having this on my detox - what a great snack! Higher in protein and no white bread!

That sounds really yummy Linda I like to put warm stuff on mine, so it kinda melts the cheese a little...chicken breast strips are my fav but I also use beans sometimes or boiled egg is really good. I buy the chicken strips in the lunch meat section, and just heat in microwave, lots of protein, very low fat and calorie...I use beans sometimes if I have them leftover, but I don't like that as well.

Aimee--I do the tuna as well, but I mix in a little no sugar added sweet relish and put it on whole wheat saltines or whole wheat ritz...yum! I used to think I had to have the mayo smeared in there, but it is actually better without! Imagine that! Oh, and the chicken that is in the cans like tuna, like that even better, eat it the same way or just straight out of the can by itself for a quick protein punch.

I love taco salad. Tons of romaine lettuce, tomatoes, onions (if you like them), grated carrots sometimes, a half cup of canned pinto beans, grated 2% sharp cheddar, lots of salsa and a dollop of light sour cream... sprinkled with taco seasoning. About 250 calories.

If I am having it for dinner I will sometimes throw in a crushed taco shell (50 calories) and maybe some cubed chicken or cooked lean ground turkey.

Great with cubed avocado, and black olives as well!

I'm going to say. . .whatever floats your boat, Linda! Really, it's nice when you discover something you really enjoy. My DH hates my green beans with TJ's red pepper sauce and ff feta cheese. So do my kids, my relatives, my neighbors, my guests. . .

I love salads! However like some of you have mentioned, they don't always fill me up.
I love tomatoes, lettuce, bean sprouts, carrots, cucumbers, eggs, green onions, mushrooms, and cheese on mine!
Sometimes i tend to put a lil too much cheese though. Gotta watch that.
