Barbecue night tonight.

Steak, baked potato and a mish mash of vegies all cooked on the BBQ - asparagus, red pepper, zucchini, onions, mushrooms, tomatoes, with oil free balsamic vinaigrette.

MMMMMMM, Dinner tonight was so good!

DH grilled chicken on the BBQ, we had tons of green beans and 1/2 of a small acorn squash, mashed w/ a little Brown Sugar twin, cinnamon and pecans.

I wanted to chime in and say that I eat in bed every day. I eat my last meal while I'm reading, right before I go to sleep (haha, in bed and reading while I eat!) and it doesn't pose a problem for my weight loss. Like the others said: calories in, calories out.

We just had spaghetti. I actually ate pasta! hahaha I ran out of time and didn't get to get my squash in the oven so we had Barilla Plus Rotini (it's a multi-grain pasta...not whole grain, I don't think, though) and my sauce was homemade with venison so very lean. I also fixed a salad with it. We worked in the yard the ENTIRE day so I don't feel guilty about a serving of pasta! :)

Went out for dinner tonight. I had a cup of squash soup and then a spicy chicken salad. The only bad part, was the chicken was breaded :( but I think it was better than a lot of other things I coulda had.

Pizza on homemade whole wheat crust, with bell pepper, broccoli, chicken breast sausage, olives and a little bit of cheese, and a big ol' salad.

mandalinn..... maybe you can give me some advice. I like my pizza crust thin and I have tried buying whole wheat crust "balls" from the pizzaria where I love their pizza. But when I try to press it out or roll it out, it kind of shrinks back in and I can never get it as thin as they do. Any suggestions? I am desperately trying to get my kids and DH off the pizza hut friday night gig. And I am more than willing to make the pizza at home.

Not Mandalinn, but sometimes I make pizza using whole wheat pita bread. I slice the bread in half so that I am left with 2 circles and that becomes my crust. I add some sauce, cheese and veggies and it's really, really good.

Flat wraps also make a very good crust.

Not Mandalinn, either, but I agree with Robin. Flat wraps make GREAT pizzas because they are VERY thin and get nice and crispy. As far as flattening out regular pizza dough...you just have to keep working it. Acting like the pizza man and stretching it over your fists really does work best but it takes practice. Don't try and toss it up or anything...just move your fists around each other...pulling SLIGHTLY out as you do...then kind of "bump" the dough up off your fist and go in slightly and repeat. If you can't do that...try getting a dough/pastry roller. They're handheld and they're only about 4 inches wide...with a handle. So you can just roll and roll and roll...out and around from the center. Good luck!

I just roll mine - and I bake on a pizza stone. Its a rougher surface, so the pizza stretches just a bit better. If I cook it on a greased cookie sheet, it shrinks back up, but it works like a charm on my pizza stone.

I always forget to post here, so here is my week's worth of menus, all planned and grocery shopped for:

Monday - Chicken stirfry over brown and wild rice, with carrot, bell pepper, broccoli, and snowpeas.

Tuesday - Turkey breast meatloaf, sweet potato fries, and green beans with lemon and garlic

Wednesday - Chicken sausage and mixed vegetable frittata with leek, broccoli, bell pepper, and zucchini with crumbled goat cheese

Thursday - Pork tenderloin stuffed with laughing cow wedges and bell pepper, roasted brussel sprouts, and baked baby red potatoes

Friday - Sausage, barley, and vegetable soup with all of the leftover veggies from the week (at the very least, carrot, zucchini, celery, and green beans).

Dinner tonight is leftover pumpkin saag with cauliflower and a salad.

Tomorrow is going to be adzuki beans/delicata squash/mushrooms with cauliflower or baby bok choy and a salad . (I already cooked the beans last night).

Wednesday is the same as tomorrow.

Thursday is the same as tomorrow.
