Mug, I don't know how to successfully fry or roast tofu, either. I like it when I eat it in a restaurant, but I have yet to be able to recreate anything similar at home.

My mom makes tofu blended up in stuff all the time: dips, "cheesecake", etc. and it turns out well.

Oh, last night's dinner was baked tilapia and a cabbage/carrot salad. Not sure what's for dinner tonight, whatever doesn't require much work.

Tonight for us is broiled mahi mahi with Mrs. Dash seasoning and maple mustard wilted spinach. Should be relatively quick and easy which is a cooking requirement for me.

Tonight I'm breaking out the barbecue for the first time this spring.

I've got chicken breast marinating in lemon juice, a bit of olive oil and some rosemary and will have that with barbecued vegies - eggplant, zucchini, peppers, mushrooms and maybe tomatoes if I can get some decent tomatoes.

fun friday night, I'm having a "crazy plates" pizza - it's a little high, about 400 cals for 1/2 a pizza, but it's pretty big and filling and most important, absolutely delicious! so i'll have that and my 1 diet coke I have week and it feels like friggin' Mardi Gras!

it's a brand, tamralynn, called "crazy plates" and get this!!! it has pepperoni & italian sausage on it!!! and tons of onions and red peppers - it's sooooooooo good i like it better than any other "ordinary" pizza...mmmmm spicy!

I am making a chicken and broccoli frittata with red onions and low fat cheese. Also going to have a small green salad!

I just had a yummy dinner.

Sauteed chicken breast with spinach, onions, mushrooms in a garlic/wine/lemon sauce. Soooo good. I served it with thickly sliced broiled zucchini seasoned with garlic and onion powder and a little sea salt. Hubby was swooning.

Default just wanted to post a great recipe I made...

Tonight I made my own version of vegetarian pasta e fagioli( pasta and beans). It is just lots of veggies, vegetarian soup base, white cannelini( spelling?) beans , and pasta..
Here is how I made it...
I sweated some chopped onion ( 3/4 of a medium onion) , 1/4 cup of pepper, 3 carrots chopped , 3 celery stalks chopped, after a while when the water was almost gone I added 1 tsp of olive oil and continued to cook it for 3-5 minutes more, added 2 chopped garlic cloves ,and cooked for 1 more minute. then I added a box of veg. broth, a can of organic diced tomatoes, 2 cans of cannelini beans, and some chopped spinach, and let cook, while this is cooking I added salt, italian seasoning and red pepper flakes, after 15 minutes or so, I added 6-8 oz of pasta, and let cook until done. It taste wonderful. I will be eating a small bowl for dinner, usually I add shredded cheese and eat with some type of bread.

Taco salad made with lettuce, tomato, Smart Ground and low sodium taco seasoning, black beans, corn, cheese, and taco sauce. Kids love it and it fits into the plan!
