Low Calorie Desserts
 
I was wondering if anyone had some yummy low cal dessert recipes. I have been craving sweets, and I am getting tired of fat free ice cream. Please share with me! I miss cake LOL.

I like 100 Calorie Hostess Cupcakes in the freezer. I love them.

I love Danon Light and Fit yogurt at 60 calories. I put them in the freezer. I then add in a tablespoon of Fiber One cereal. Delicious - almost as good as ice cream - better in fact because it's so healthy.

I love putting fat free whip cool whip on graham crackers and putting them in the freezer - yummy.

I also love chocolate so I take a chocolate cake mix and put in 1 can of pumkin (use the pumkin in place of the oil and eggs - you can also use a diet coke in place of the pumkin). If I use pumkin I usually add a little water to help mix it up. It makes 24 cupcakes. On WW it's 1 point which is probably about 50 or 60 calories. Add a some strawberries and FF cool whip and it is soooo good!

Lately I've been baking peaches. Cut a peach in half, remove the pit, and fill the dent left in each half with a well-stirred mixture of a little bit of butter or margarine (I use a transfat free light margarine with 60 cals per tbsp), a teaspoon of brown sugar (you could use splenda brown sugar, I guess, though a teaspoon of unpacked brown sugar has very few calories really, so I don't bother), and a few tablespoons of old fashioned oats, plus cinnamon to taste. Bake at 375 until the peach is tender and the stuffing is browned.

Sometimes I top with yogurt or fat free/light whipped cream, or even a quarter cup of light ice cream. One peach half without any extra whipped cream or other toppers is about 80 cals, plus you get a decent amount of fiber from the peach and the oats.

I like Stonyfield farms non fat choclate yogurt, It might sound wierd but does wonders for sweet tooths. I do treat myself once in a while to a bar of dark chocolate. Also there is fat free fudge bars, the Kashi Tlc chocolate cherry bar, um.. maybe jello fat free chocolate pudding( I would eat the whole box,so I don't get them.

I buy the small cans of Dole pineapple slices (the ones in their own juice) and put them in the freezer. Take a can out of the freezer and eat them straight from the can with a spoon. It's better than ice cream!

I just try and stick with the Skinny Cow fudge bars. I'm not very trustworthy with anything else. I tried getting the reduced calorie jello pudding in the individual cups and ended up eating all six of them.

I love the idea of the 100 calorie packs of things but they need to sell them individually. I could buy one and eat it but if I have to buy 10, I'm going to eat 10. It's one of the little things I've had to come to terms with.

kozy shack sugar free rice pudding... 90 cals
3 tbps light cool whip 35 cal - put in on berries or something or jello or both
100 cal packs of cookies
light hot chocolate ... 35 cals a cup
grande light vanilla bean frap from starbucks 160 cal and takes like ice cream!

I am really wanted to try that chocolate cake mix and pumpkin... not sure about the diet coke thing?

I love to smear a 50 calorie whole wheat tortilla with a tbs of peanut butter, nuke it until it's all warm and melty. Then, I wrap the tortilla around a really ripe banana. Heaven.

I also like frozen dark cherries or frozen mango.

I like to cut a cameo apple into small pieces, nuke in the microwave for 5 minutes. Then, I add 1/2 cup frozen blueberries, cover the bowl with saran wrap and nuke for 1 more minute. A tiny bit of granola on top is good too!

Robin, we are so alike! I can't buy things like that. I have no ability to pace myself with packaged snack foods.

I think the phenomenon was best described by the comedian Paula Poundstone. She said about Pop Tarts: "In a box of Pop-Tarts there are three sets of two. You open one foil pouch, cause you just want one. Well, you have to eat the other one, or else it will go stale. Now that you've had two, you figure it's not a snack anymore, it's a meal, so you eat two more. Then you think "well I can't leave just one pack sitting in the box all by itself." So you eat that one just to tidy up, really." Sigh. The truth hurts...

what a great idea. I've had those yogurts before, but they are not real, and always felt weird to eat, to watery I guess. Freezing them makes so much sence... Thanks!

My current favorite snacks are:

Popcorn sprayed lightly with Pam butter spray and sprinkled with cinnamon and a Splenda packet. It is sweet, spicy, and crunchy and so yummy!

Bread & Butter pickles made with Splenda. Mt. Olive makes the brand I eat and these are so sweet their like pickled candy. :D

I love light yogurt with a tablespoon of chopped walnuts or a little Kashi crunch sprinkled on top.

For fruit I have been eating lots of cantaloupe. You can have 10 oz for only 100 calories. There is this guy near my school that has a small fruit stand and I have been buying a couple a week from him. I'll miss that guy when the season is over. :(

Ummm I found this on Cooks.com and made it tonight...absolutely delicious!!!!!!!!

LOW CALORIE APPLE CRISP


4 med. apples, pared and sliced
2 tsp. cinnamon
1/2 c. crushed graham crackers (used low fat)
1 tbsp. sweetener
1 tbsp. lemon juice
2 tbsp. butter, melted (I used reduced fat margarine)
1/2 c. toasted bread crumbs
3/4 c. hot water

Arrange the sliced apples in a 1 1/2 quart casserole dish. Sprinkle the sweetener, lemon juice, and cinnamon over the apples. Combine the melted butter, crackers, and bread crumbs and sprinkle over the apples. Pour the hot water carefully over the topping. Cover and bake in preheated 400 degree oven for 15 minutes. This makes 8 servings at only 105 calories per serving.

I put a couple of spoons of FF Vanilla ice cream on top...Absolute Heaven for about 150 calories after a little dab of icecream.

I just heard that Hershey came out with a 100-calorie chocolate bar! Insane! I don't know that it's a path I should explore - I have too many bad habits already - but they sounded pretty good, and a small amount of dark chocolate is supposed to be healthy...

I really like a baked pear or apple with a smidgen of honey or some splenda brown sugar, and some steel cut oats on top

My new favourite thing is sugar/fat free chocolate pudding -- mix it up and put a few drops of mint oil in it, and drop little spoonsful on a baking sheet and freeze them, and transfer to a container once frozen -- pop of few of those minty frozen treats and you'll send me a thank you card :D

Wow, those zucchini brownies look outstanding! I plugged them into Mastercook, changed the oil to unsweetened applesauce, the sugar to Splenda, and eliminated the walnuts (I don't like them) and they came up at 69 calories each. Not bad for a chocolate fix that isn't from a package!

Also, take them to work and don't tell anyone they're zucchini - no one knows the difference.

I make the chocolate cupcakes! I took my chocolate mix and mixed it with the pumpkin, and no one knew! I could really taste the pumpkin in the raw batter, but when they cooked up you want taste them at all! And they were SOOO moist, I will be making these all the time cuz they are so easy! Thought I guess there are more like a muffin...

They worked out to 100 cals and 2 weight watchers points each :)

Tonight i tossed about a cup and a half (for two servings) of pitted fresh cherries...they are SO good this year!...with a little splenda, then topped with a mix of a small amount of light butter, oats, and a tsp per serving of white sugar. Baked in individual ramekins for 20 minutes at 400 degrees...single serving, healthy cherry crisp. Top with 1/4 cup of light ice cream and you've got perfect summer decadance.

I enjoy so many of the recipes, I wanted to share this one with everyone::

FAT-FREE CHOCOLATE CAKE

Serving Size : 16

Non-stick cooking spray
1 1/4 cups Flour
1/2 cup Unsweetened cocoa
1/4 cup Cornstarch
1 teaspoon Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
1 1/4 cups Sugar
1 cup Water
3 Egg whites
1/2 cup Corn syrup -- light or dark
Confectioners' sugar (opt.)

Spray 9-inch square pan with cooking spray. In large bowl combine next seven
ingredients. In medium bowl stir sugar and water until sugar is almost
dissolved. Add egg whites and corn syrup;
stir until blended. Gradually add to dry ingredients, stirring until smooth.
Pour into prepared pan. Bake in 350 F oven 35 minutes or until toothpick
inserted in center comes out clean. Cool in pan on wire rack. If desired,
sprinkle with confectioners' sugar.

Each serving provides: 0 g total fat, 0 mg cholesterol, 140 Calories, 2 g

My new favorite is No Pudge brownies! I found them in the natural foods section of my regular supermarket. I've also heard they're available online. They're no fat, all natural. You mix them with yogurt. They work out to be 110 cals, or 2 WW pts. They taste just as good as regular brownies, just better for you. My favorite part is that you can make a single serving in the microwave. That way you're not tempted to eat the whole pan.

My other favorite summer dessert is a fruit slushie. Mix frozen fruit, and premixed crystal light. Blend them in a blender. Top with ff cool whip. YUM!! I think I had one everyday for about a month now. I've mixed it up with different fruits, and different flavors of crystal light. Some really good! Some I won't be doing again! But it's fun to expirement!!
