What's for Dinner Tonight? April

  • I know we're half way through the month, but I thought I'd start this thread again. I'm kinda missing it.

    Sunday's dinner:

    Grilled chicken cutlet on a bed of sauteed spinach and garlic, topped with broiled tomato slices. Roasted green beans with onions and slivered almonds.
  • Parmesan chicken (boneless chicken breast lightly coated w/a mixture of parm. cheese and dry italian dressing mix then baked), green beans, cauliflower and a salad.
    The green bean loving child left, so I had carrots instead. And ate one serving of potatoes(child at home's choice)instead of the cauliflower.
  • cut-up chicken breast stir-fried with three colors of sweet peppers, onions and Mexican spices, topped with ff sour cream and hot salsa. Probably served over a little bit of brown rice.
  • BBQ chicken pizza - 6 pts, steamed asparagus and cabbage, a spinach salad with almonds and a glass of skim milk.
  • Tonight is one of my usuals and still one of my favorites.

    Chicken breast stir fry with lots of onions, garlic, mushrooms, red pepper, zuchini and broccoli.
  • Tonight - I am doing mac and cheese (whole grain pasta) for my son (he's been asking for it for a while), and I am going to make myself mac (whole grain) and tomatoes. Instead of regular kielbasa, I picked up some turkey kielbasa. I also picked up some french bread - but I don't know if I will eat that or just make it for my kids.
  • We'll be having the chicken stir fry here too Robin! (over brown rice, of course!)

    I just had my lunch (which was very yummy too!) I threw a ton of cut up mixed peppers - red, yellow and green, onion, a huge clove of garlic, a baby zucchini cut up, sauteed them in a little water then added one of those trader joe salmon patties - served it in a ww tortilla with a teaspoon of grated parmesion.
  • Mrs Q, your lunch sounds delish as does your dinner I must say. Isn't it amazing just how many delicious, HEALTHY, low calorie foods there are in the world? I mean you start with garlic and onion and you just can't go wrong. Add in some fresh veggies and it's all good. And the volume just can't be beat. I'm just lovin the lifestyle. I know you are too! I can tell by your "voice" and by your fast moving ticker.
  • Tonight's dinner:

    Salmon fillet, baked with fresh garlic, lemon juice, parsley and black pepper. Served with tons of roasted green beans, asparagus and zuchinni sticks. Yum-ME.
  • I dont know what I'll have tonight, but last night we had grilled chicken on the George Foreman Grill with lemon pepper, Lipton Brocoli and Cheddar Rice with no butter addes, and fried corn using non fat cooking spray. It was good!
  • Tonight is pizza and salad night around here.

    I'll use a flat wrap as my "crust", add a little marinara, a little low fat cheddar/mozzerella cheese combo and diced onions and red peppers. With a big salad of baby spinach, romaine hearts, red onions, diced mango and sliced strawberries with a touch of balsamic vinegar.
  • last night was greek chicken with whole wheat rotini salad and spinach...
    tonite will be grilled mahi-mahi, quiona, green beans and salad
  • Tonight, I'm thinking 1 cup of ww pasta, with 1/2 cup tomato sauce, and tons of sauteed brown mushrooms. A tbsp of parmesan sprinkled over the top. Oh goodness, I'm drooling already.

    ETA: Forgot about my salad!! Mixed greens and some low fat ranch dressing. Maybe a few nuts sprinkled in.
  • I think an Asian-marinated chicken breast from TJ's (gotta empty my freezer) cut up into a big salad with a little ff ginger-soy dressing. Glad I'm not weighing tomorrow because it's quite a bit of sodium, but pretty good caloriewise. Maybe some spicy sweet potato fries to go along with it.
