1 1/2 cups finely chopped zucchini or yellow squash
1/2 cup medium onion, finly chopped
2 large cloves garlic, minced
6 oz flake style surimi (imitation crab)
4 oz nonfat cream cheese
1 Tbsp. prepared horseradish
2 Tbsp. fresh grated parmesan cheese
1 1/2 tsp. Worcestershire sauce
Preheat oven to 400*F. Spray two 1-cup ramekins or individual baking dishes with nonstick spray and set aside.
Heat a nonstick skillet and spray with cooking spray. Add squash, onion, and garlic and saute until tender. Place veggies in a mixing bowl and add remaining ingredients; mix well. Divide mixture among the two ramekins and bake for 30 minutes or until golden and bubbly.
