Surimi Cheese Bake

recipe ingredients
1 1/2 cups finely chopped zucchini or yellow squash
1/2 cup medium onion, finly chopped
2 large cloves garlic, minced
6 oz flake style surimi (imitation crab)
4 oz nonfat cream cheese
1 Tbsp. prepared horseradish
2 Tbsp. fresh grated parmesan cheese
1 1/2 tsp. Worcestershire sauce

recipe directions
Preheat oven to 400*F. Spray two 1-cup ramekins or individual baking dishes with nonstick spray and set aside.

Heat a nonstick skillet and spray with cooking spray. Add squash, onion, and garlic and saute until tender. Place veggies in a mixing bowl and add remaining ingredients; mix well. Divide mixture among the two ramekins and bake for 30 minutes or until golden and bubbly.

    Not sure the measurements were right. it was supposed to get bubbly and creamy – never happened. My wife liked it but I will pass. The texture was very different.

    The recipie was delicious in my opinion. Maybe cut the onions and up the squash a bit, but otherwise so rich tasting but so good for you. I really enjoyed it. It also heated up in the microwave really well, which for me, is very important.

    Never gets bubbly and creamy — that part must have been left over from the version with FATTED Cream Cheese! But I love this recipe — have been making it for months — the only alteration I make is only 1 teaspoon of Worchestershire sauce.
