Portobello Penne

recipe ingredients
8 ounces dried uncooked penne pasta
3 tablespoons margarine
2 teaspoons minced garlic
12 ounces sliced portobello mushrooms
1/2 cup white wine (or substitute with broth)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup chives

recipe directions
Cook pasta, drain and keep warm. In non-stick skillet heat 1/2 of margarine and add garlic and mushrooms. Cook until browned. Place pasta in dish and top with mushrooms. In the same skillet add wine, and bring to a light boil while scraping pan. Add remaining margarine, salt and pepper. Pour sauce over pasta and mushrooms and sprinkle with chives.

    This dish was really good. It doesn’t even taste like a diet food. I did modify the recipe a little bit. I added 2 TABLESPOONS of garlic, 16oz of mushrooms, used light margarine (40% oil spread), and added about 2-3 Tablespoons of low fat parm cheese………..mmmmmmmmmmmm! (oh yeah, with those modifications the calorie content is 320, 53g carbs and 5.4g fat per serving)

    I made this for dinner for my meat-eating husband and he loved it. It really is fantastic. I also added just a little parmesian cheese, but it is good with or without that addition.

    This has become one of my all-time favorite dishes. Just smelling it cooking is an olefactory feast. I have used Brummel and Brown in place of the margarine and always make it with chicken broth (as a substitute for the wine). I’ve had numerous requests for the recipe.

    I made this tonight and used stock. Mine felt like it was missing a little something, but I think that maybe it was because I didn’t add the chives. I think an onion flavor would just put it over the top 🙂 I will DEF make this again and again!
